Scallop with ice cream made of potatoes
We were present at the official opening of the traditional ice cream season 2013 which took place at the ice cream parlor ‘Metropolitan Deli’ in Amsterdam. During this event the owner of the ice-cream parlor Kees Raat presented the latest trends en developments. Kees Raat expects that restaurants will use more ice cream in dishes, other than in desserts. According to him, star chefs are using ice cream in appetizers, starters or soup. Ice cream parlors are going to develop more special flavors.
For this event Metropolitan Deli worked with restaurant ANNA and served three dishes with ice cream: a blini with scallops, caviar and ice cream made of potatoes; filet americain, crispy oyster and ice cream made of celeriac; rye bread with bacon and ice cream made of green pea. Special combinations but very tasty!
