Zabroni | Ice tea syrup made from the peel of the coffee berry cascara
Although the peel of the Colombian coffee berry cascara forms the basis of the product, its flavour is reminiscent of ice tea. By nature, this skin has a sweet and fruity flavour, derived from different types of coffee beans. From this, a concentrated syrup is extracted. Zabroni’s cascara comes from coffee plants growing at high altitudes in Colombia. The flavourful syrup is a good base for a cooling lemonade, a flavouring in cocktails or tasty topping for breakfast or dessert.

Unique flavour, mild energy boost
Cascara tea is made by drying peels of coffee berries in the sun, right after the bean is extracted from the berry. Zabroni then uses these peels to make a delicious syrup in the Netherlands. It is the first cascara syrup of its kind in the European Union. The use of the peels of different coffee varieties creates a rich and diverse flavour. It is characterised by notes of dried fruits such as figs and sultanas. A hint of orange is added to the syrup to develop the perfect ice tea flavour. Cascara contains about a quarter less caffeine than coffee and the caffeine is more gradually released into the body, providing a mild energy boost. It is rich in phenols and antioxidants, which can have anti-inflammatory effects.
“I have been coming to Colombia for years and actually wanted to do something with coffee, after seeing for myself how hard the existence of a small coffee farmer is and how screwed up the coffee chain is. When I tasted cascara tea for the first time at a small farmer’s home, I was extremely surprised by the flavour. Cascara has been used for centuries, especially by indigenous people. However, not on a large scale, as a result, nothing is done with most of cascara. The flavour, combined with the possibility of creating an additional income stream for farmers, motivated us to develop this new product. The fact that it also has health benefits is a great bonus as far as I’m concerned,” says Hans Mosselman, founder of Zabroni.
Whereas previously coffee farmers often simply left the husks of the plant on the land, using the husks generates a new income stream for coffee farmers in Colombia.
