Young entrepreneurs & new concepts | CUP N CRUST, restobar Vivid and Haricot
Every day we spot fun, new concepts. This week: CUP N CRUST, the ‘little sister’ of Panda Pizza in Kralingen, Rotterdam. A specialty coffee bar where they sell CUPS (coffees, lattes, Matcha, Chai, Mocktails) and CRUSTS (Focaccia’s). In Utrecht on the Nobelstraat, restobar Vivid opened its doors this month. A shared dining (or not, of course) concept where they serve Mediterranean dishes in a casual atmosphere with a DJ on Fridays and Saturdays. And in Maastricht, Haricot opened its doors this week. A fine dining restaurant but slightly different, with a focus on fish, crustaceans and shellfish.
We wish all these entrepreneurs and their teams lots of fun and success with their concepts. More information below!

Get your bean boost and crust fix at CUP N CRUST
CUP N CRUST is a specialty coffee bar where guests enjoy fresh focaccia with 100% halal toppings daily. Open since the end of August on the Frits Ruysstraat in Kralingen, Rotterdam. Their coffee comes from Rotterdam-based coffee roasters such as A.M.O.C. and Grounded Craft Coffee. One of their most popular drinks is the Strawberry Matcha Latte.
They serve CUPS (coffee, iced lattes, smoothies and mocktails) and CRUSTS (focaccia with halal toppings, such as a Tartufo with black truffle cream, veal ham, fresh arugula, with a fried egg and fresh basil) all week from 9am to 5pm. According to the owners, their extensive knowledge of dough, gained at their pizzeria Panda Pizza, makes their focaccia perfect. CUP N CRUST is therefore known as the ‘little sister’ of Panda Pizza. The logo, an abstract panda, is a nod to this connection. Panda Pizza opened a year ago and has established itself as a unique concept, with 100% Neapolitan pizzas prepared in a wood-brick oven. Restobar Vivid in Utrecht | A restobar with moves
A hidden gem among the cafés and student bars on the Nobelstraat: restobar Vivid likes to stimulate all the senses and goes for high quality. Not only is the food delicious, but the people are more than nice, the music does its thing and the ambiance feels right instantly. Slightly homely maybe even, but with a fancy character and a naughty edge.
A new hangout for local residents, the place to be for those who really go for it and surprise for the casual passer-by. Owners Roy Rops and Tessel Andeweg love the good life and specifically just about everything you find on your plate in southern Europe. And so that is what you can expect at Vivid: delicious and surprising Mediterranean dishes. Think crispy fried ‘Gamba Cristal’ with aioli and a softly cooked beef short rib with Bagna Cauda. But also pani puri stuffed with steak tartare. And an Oosterschelde Creuse from the North Sea served with beurre blanc of Noilly Prat & kombu with caviar.
Naturally, everything is super fresh and of high quality at restobar Vivid, we wrote about their concept before. And if possible, all ingredients are scored locally. A shared dining (it’s okay if you don’t want to share) concept and on Friday and Saturday, a DJ takes over mid-evening and a small party is never far away. They have also planned a ‘New Year’s Eve’ party on 31 December. The reel below gives a cozy insight and their website is linked in the title!

Restaurant Haricot in Maastricht | Fine dining but just a bit different
This week, restaurant Haricot opened in Maastricht at the Rechtstraat 88a. The kitchen team of owner Mathijs van der Boon also includes Jacques van den Bosch and Luc Franssen. They met each other, several years ago, at restaurant Librije (***) and they worked at more high end restaurants. At the front are Shiva Brugge, Keanu Pattipeilohy and Kyra Smit. Haricot carries contemporary French cuisine influenced by flavours from around the world. The menu consists mostly of fish, crustaceans and shellfish. For example, currently on the menu is Kingfish, St Jacobs mussels, Haddock but also duck. They work with a set menu and have created a six-course selection in which seasonal ingredients always play the main role. Guests also have the option to expand the menu with, at the moment, for example, ‘sweetbread, cordiceps, sea lettuce’ or ‘ox sausage, goose liver, passion fruit’. Sounds delicious!
They call their food ‘sophisticated and contemporary’. By this, they mean that a lot of effort is put into balancing flavours but it should remain just a great plate of food. Besides, eating out should also just be cozy, no dress code and no fuss. Haricot is open from Thursday to Monday for dinner and on Saturday and Sunday also for lunch. Check out the team in the reel below, the website is linked in the title.
