CHÀO PIZZA in Bussum | They serve Neapolitan pizzas even some with an Asian touch
On January 31st, the doors of CHÀO Pizza at the Kapelstraat 9 in Bussum opened. After years of experimenting with different types of flour and techniques and gaining working experience at a top pizzeria in Europe, nNea in Amsterdam, pizza chef Tom Han together with his brother Toa Han and entrepreneur Rogier Wijnands are introducing an innovative concept in the heart of Bussum. In their own pizzeria CHÀO Pizza, they combine authentic Italian craftsmanship with the flavours from their Vietnamese background. They work with high-quality ingredients and an airy dough that has to proof for at least 24 hours. On the menu, alongside classic Neapolitan options, there are also unique Asian creations, such as the “Bò Kho” pizza with Vietnamese braised beef and the “Vòi” pizza with roasted octopus. We also think the “NÁM” and Mortadella e Pistacchio pizzas sound very tasty. And besides the Italian dessert Affogato, they also have a scoop of vanilla ice cream with a dash of olive oil and Maldon salt!

ELEVATE COFFEE LAB in Amsterdam | An experiential coffee space
Opened mid-October 2024: ELEVATE COFFEE LAB at the Van der Helstplein 10H in Amsterdam. Here, the coffee lab’s owner and founder Ahmad has created a calm, experiential coffee space. Coffee is explored from different angles, different brewing methods, origins and with experimental techniques. The baristas engage with customers, share stories about the coffee industry and emphasize transparency in provenance and sustainability. One of ELEVATE COFFEE LAB’s missions is to teach guests more about coffee by organizing cuppings, tastings and training sessions. Ahmed has been in the specialty coffee industry for around 9 years, from barista to roasting and training. He has spent around 4.5 years working on the concept, which has a very stylistic and minimalist feel. With unusual coffees on the menu such as a Botanica (Colombia, Washed Verbena, Florals, Saffron) and El Diamante Geischa (Costa Rica, Geisha, Cinnamon, Peach, Red Apple). The espresso looks delicious too!
