At horecatrends.com we spot many national and international trends on a daily basis. We pick the most interesting ones to write about, the other trends we use in our weekly column ‘Trends we spotted this week’. With this week links to articles about:
- Dirty Sodas – we wonder if Europe will be taking over this trend from Utah? It’s served at for example SWIG, ‘home of the original dirty soda’, as they call themselves.

Why not serve slices of this festive looking Tiramisu Cabin? We love The Santa Lucia Kayak Parade in the canals of Copenhagen, by restaurant Kayak Bar. There is another Italian restaurant in the Netherlands on the list: at spot 45 is chef Pasquale Carfora’s restaurant Aroma in Vaassen.

Dirty Sodas | The next boom?
Seen on social media and read about in the 2025 Baum & Whiteman trend report, linked in the title. They’re asking themselves if ‘Dirty Sodas’ are the next drink industry trend. And it seems to be in Utah! A dirty soda consists of a ready to mix beverage like Coca-Cola, Seven-up, Mountain Dew, combined with a fruity crush or syrup like strawberry, pineapple, watermelon, pomegranate, guave or even boba pearls, stir it up with something creamy! Cookies for texture and top of with caramelized whipped cream or raspberry foam! It sound like the possibilities are endless, check out the reel by Swig Drinks below, that Dirty Soda is created with cinnamon, Dr. Pepper and coconut.
It originates in Utah where lots of Mormon people live and they don’t drink liquor or coffee. A couple of chains sell these dirty sodas, like for example Swig (home of the original dirty soda). Their seasonal sips are: Mistletoe Magic, Alpine Avalanche, Reindeer Roca, and Roasty Toasty.
We think it resembles the Freakshakes which are still sold here in Europe! Will we surrender to the Dirty Sodas trend?

A margarita flight from Rodrigo’s Mexican Grill
Rodrigo’s Mexican Grill in rolled out multiple offerings and initiatives on October 25th. One of them got our attention: a Margarita flight. All 10 area locations of this Southern California Mexican Concept did debut their exciting Margarita Flights, inviting guests to expand their tastes and dive deeper into the Rodrigo’s cocktail menu. Their idea: ‘try all 4 and discover what may just be your next Margarita obsession’. Great idea and festive for the Holiday Season! Check out the reel about the flight.
Top-Loaded Fries at Dave’s Hot Chicken
We recently wrote about Dave’s Hot Chicken because they’re opening their first location in the UK. The brand originates from Southern California. Dave’s Hot Chicken continues to give guests more of what they’re craving, with the company’s newest menu item, Top-Loaded Fries, available at all Dave’s locations. Available in sizes Small, Regular and Large, Dave’s Top-Loaded Fries start with a generous helping of the company’s hot-and-crispy fries, piled high with cheese sauce, pickles, kale slaw and topped with Dave’s Bites and drizzles of Dave’s sauce. All though we think it’s a bit unhealthy and much, it might be inspiration for snack bars in Europe!

New products for ice tea series BOS | BOSpresso to make the perfect Rooibos Cappuccino or Latte

A tiramisu cabin instead of a gingerbread house this holiday Season
Spotted on the Instagram account of Audrey Gebhardt (linked in the title) a tiramisu cabin instead of a gingerbread house! If you build the cabin equal parts you can slice it at the table! We once had a slice of cake which was served by the meter, inspirational way to serve a dessert dish!

Spotted on the Instagram account of Copenhagen Spots: the magic of Santa Lucia, hosted by restaurant Kayak Bar (link to their website in the title) The Santa Lucia Kayak Parade lit up the canals in Copenhagen with beautifully decorated kayaks, festive songs, and a cozy atmosphere. Great way to embrace the holiday spirit!

WE ARE EDN | New, approachable, family-friendly, all-day dining concept in Amsterdam
WE ARE EDN, pronounced ‘eden’, is a concept by StiR Creative Collective, Hilton’s creative consultancy, and opens its first location in Amsterdam. The atmosphere in the restaurant and bar is homely, with much inspiration drawn from nature and the international menu complemented by local favourites. WE ARE EDN is approachable with an open and attractive feel that should appeal to the two million passers-by a year on the Oosterdokkade to come in for breakfast, lunch, dinner or drinks.
WE ARE EDN is a slice of paradise on the ground floor of the DoubleTree by Hilton Amsterdam Central Station, a few minutes’ walk from Amsterdam Central Station. EDN stands for Engage, Develop and Nurture, and is a call for sustainable, positive change in the city.
Pianeta Terra named best Italian restaurant of the Netherlands again
In Milan this December 16, it was announced that progressive Slow Food restaurant Pianeta Terra was ranked 31st in the 50 Top Italy list of 50 best Italian restaurants in the world. This makes Pianeta Terra the best Italian restaurant in the Netherlands for the fifth consecutive time, according to the jury.
In a former horse stable in the heart of Amsterdam, progressive ideas about sustainability, waste and planet-friendly cooking and consumption have been served up in appealing ways at Pianeta Terra for 25 years. The modern art on the walls, the playful layout with the long bar and the warm but clean look reflect what happens on the plate. The produce comes from small local suppliers, from the Slow Food Presidia – which supports the high-quality cultivation of crops and species threatened with extinction – and the Ark of Taste. For pizza or spaghetti bolognese, this is not the place, but local heroes like chinchbak from ‘Extraordinary Pig’, Wild Wadden Sea oysters from ‘Good Fishermen’ and Crow’s breast from ‘The Kitchen of the Unwanted Animal’ are given plenty of room to shine in Fabio Antonini’s modern and innovative dishes.
