At horecatrends.com we spot many national and international trends on a daily basis. We pick the most interesting ones to write about, the other trends we use in our weekly column ‘Trends we spotted this week’. With this week links to articles about:

  • We think the Ritz Carlton Berlin has one of the most beautiful Christmas trees in their lobby, ‘Der Giving Tree’! An initiative to make wishes come true for children who are hospitalized. They give their guests and passers-by the change to participate in the season of giving.
  • Heineken Hoek Steakhouse has recently opened in the hotel ‘The Diamond’ in Amsterdam.
  • Le Pain Quotidien opened its first franchise in Maastricht and is looking for expansion to other Dutch cities through franchise.
  • Great examples of how international ‘Christmas trends’ are used – in their own way – in the Netherlands. A gondola and a ‘Christmas lighting party’ or as they call it a ‘magical winter evening’ at ‘t Noorden in Aalten. And you can dine in a transparent igloo at restaurant Saus in Bergen op Zoom.
  • 1 Hotels announced a new hotel in 2025: 1Hotel Tokyo.
  • A Reindeer Games Pop-Up Bar’ at Holston House Nashville.
  • Panera turns the holidays upside down with their new: limited edition Holiday Soup Cup Collection. Some ‘soup’- inspiration!
  • The ugly Christmas sweater ‘trend’ continues to inspire, this time we got a press release from soccer club PSV and came across a press release from KFC about their Christmas sweater.

‘Der Giving Tree’ at the Ritz Carlton Berlin | ‘A season of giving, a tree of wishes’

In the lobby of the Ritz Carlton in Berlin stands ‘The Giving Tree’. A tree that shines and holds wish cards from children who are hospitalized at Sonnenhof Hospice. For more than 20 years, the hotel, in cooperation with the Björn Schulz Foundation, has offered these children and their families a little joy during a festive afternoon at the hotel. Santa will also bring presents, guests and passers-by can come and pick a greeting card from the tree and buy a present that will make the wish come true! The presents must be brought to the hotel by December 15. As the hotel points out, ‘let’s create unforgettable memories and keep the true spirit of the season alive’.

Heineken Hoek (corner) Steakhouse now also open at The Diamond

Now open in the recently opened hotel The Diamond in Amsterdam, the Heineken Hoek Steakhouse. On the first floor of the hotel you will find the high-end fusion Steakhouse, where guests enjoy a culinary experience. Serving top dishes inspired by Latin American, Caribbean and Mediterranean cuisines, the restaurant offers a unique blend of flavours and quality. The Heineken Hoek Steakhouse is a vibrant all-night destination with an energetic atmosphere and live entertainment from Thursday to Saturday that completes the experience.

Le Pain Quotidien opens in Maastricht | First franchise in the Netherlands

Maastricht welcomes the first franchise outlet in partnership with Henri Hochstenbag of Le Pain Quotidien, the iconic Belgian restaurant and bakery concept. The internationally successful franchise formula offers guests a warm, cozy and informal atmosphere. The menu consists of fresh artisan bread and a wide range of organic products, also suitable for both vegetarians and vegans. There are expansion plans and Le Pain Quotidien is looking for enterprising individuals with passion for the concept and hospitality experience in The Hague, Rotterdam, Utrecht, Breda and Eindhoven, among others. Check out their website, linked in the title.

Dine in an igloo at restaurant ‘Saus’ in Bergen op Zoom

A beautifully heated igloo by the water where you can enjoy delicious food and drinks, that is now possible at ‘Saus Eten & Drinken’ in Bergen op Zoom. Since the end of September, they have put up igloos on their terrace at ‘Saus’ so guests can still enjoy the beautiful view.

We have seen these cozy igloos before, most recently in London at Skuna Boats, where you can float on the river and enjoy a cheese fondue in your igloo boat. Cool that this is also possible in Bergen op Zoom! Check out their reel below!

Near our office in Leiden, ‘Annie’s Bar Restaurant’ has put 2 large igloos on their terrace!

Holston House Nashville is thrilled to announce the launch of its ‘Reindeer Games Pop-Up Bar’, a holiday celebration blending festive cheer with a meaningful cause. In partnership with CreatiVets, a nonprofit dedicated to supporting veterans through art and music, Reindeer Games will donate a portion of its proceeds to help veterans channel their experiences of trauma into creative expression, promoting healing and renewed purpose. More details in their press release linked in the title.

Inspiration for hotels – a Christmas-themed pop-up with music, games and cocktails (think: ‘Santa’s Old-Fashioned’, ‘Mistletoe Mule’, ‘Frostbite Martini’ or a ‘The Jolly Nog’) for your guests and donations to charity during the period of giving!

‘Tis the season for soup | Panera Bread introduces its limited edition Holiday Soup Cup Collection

Move over, holiday lattes! This year, Panera Bread is shaking up the holiday season with a surprising twist: its first-ever limited-edition Holiday Soup Cup Collection. We all know about Starbucks and their yearly holiday prints on their cups; Panera is making its own cozy cup. The real winter favourite is the brand’s delicious line of signature soups. With more than 140 million servings sold annually, Panera’s soup has become a winter essential that guests can’t get enough of, and Panera’s new Holiday Soup Cups are perfect for those chilly days when you want to cozy up with a comforting classic.

Inspiration: great idea these soup cups, perfect for chilly days. Inspiration for other restaurants, hotels and butcher shops! In the past, we spotted some soup hatches on the side of restaurants serving bouillon.

The time for ugly Christmas sweaters | PSV and KFC release joyous Christmas sweaters and other merch

What started as a playful campaign in 2016 grew into a true tradition and a highly sought-after collectors’ item among PSV fans (a soccer club). At the time, Energiedirect was the first sponsor in the Netherlands to market a club Christmas sweater – a trend later adopted by many others. Like in the hospitality sector, where KFC® just released its own Christmas merchandise. The new Christmas collection was designed by Yeye Weller, who also designed their Christmas-themed ‘bucket’. The streetwear-inspired collection includes sweaters, T-shirts, a festive jumper, a hoodie, a beanie, socks and more, with options at various price points. More information on this playful Christmas jumper can be found in the link in the title (linked in KFC).
