French startup seeks approval in 5 key markets for cultivated foie gras
We wrote about Gourmey, the French startup making ‘cultivated’ (aka ‘lab-grown’) foie gras back in August 2021, at that time they announced that they were working on a lab-grown foie gras that could allow restaurants to continue to serve the highly-prized delicacy in an ethical way. Now, 3 years later Paris-based Gourmey, France’s pioneering cultivated food company, announces it has filed applications with the United States Food and Drug Administration (FDA), the Singapore Food Agency (SFA), the Food Standards Agency (FSA) in the United Kingdom, the Swiss Federal Food Safety and Veterinary Office (FSVO), and the European Commission (EC) and European Food Safety Authority (EFSA) to offer its flagship product to food enthusiasts, chefs, and restaurants, providing a new choice for foie gras enthusiasts globally.
Kirishima Shuzo x Starbucks’ first collaboration facility to open spring 2026 | 100% generated by sweet potato-generated power
Kirishima Shuzo, a brewery in the Miyakonojo, Miyazaki Prefecture in Japan, has adopted a method to generate biogas and electricity from two brewing byproducts: shochu lees and potato scraps. The Miyazaki Prefecture in Japan is famous for producing sweet potatoes and shochu, a spirit distilled from the crop. Recently Kirishima Shuzo and Starbucks announced a partnership to launch a joint establishment. The heat from the “warm wastewater from distillation” generated during the shochu manufacturing process will be used for heating in the winter, and the electricity used in the facility is planned to be ‘100% generated by sweet potato-generated power’. World-renowned chef Massimo Bottura debuted Torno Subito in Downtown Miami on August 21st. The restaurant is located on the top of food and entertainment spot, Julia & Henry’s. This new venture, in partnership with King Goose Hospitality, promises to bring a modern and playful twist to Italian cuisine. More details in the article on Miami Eater, link in the title.

Last week Chipotle was calling all scholars to enter the Chipotle IQ test with more than 1 million Bogos and free burritos as prizes. Hampton by Hilton unveils first‑ever Waffle Bosses for National Waffle Day
Last week the US celebrated National Waffle Day and as we are giving examples of how to use an International or National Day in the marketing of hotels, restaurants, bars etc. in our trend letter, we thought this is a great example.
Hampton by Hilton has celebrated National Waffle Day (August 24) by unveiling its first-ever group of Hampton Waffle Bosses. This trio of exceptional breakfast hosts from around the globe have been recognized for their outstanding skills in creating innovative recipes for Hampton’s signature and seasonal waffle flavours. The Waffle Boss title, awarded as part of the brand’s 40th-anniversary celebrations, is the culmination of an internal talent search in collaboration with the iconic Paris Hilton. The event was an endcap to one of the most popular restaurant weeks in the U.S., and was celebrated Friday, Aug. 16 through Saturday, Aug. 17 during set times per restaurant to treat diners and their culinary canines to a curated experience. Vineyards Open Days in the Netherlands
Sunday September 1st is the first-ever Wine Festival of the Low Countries, including the presentation of the honorary awards surrounding the annual wine awards. The Vineyard Open Days take place in September and more than 30 Dutch vineyards are participating. This year’s Open Days take place in the weekends from Saturday 7 to Sunday 29 September, in the link in the title the list of participating vineyards.
