At the editors of Horecatrends, we receive many trends from home and abroad every day. We pick out the most interesting ones, other short trends we collect in the ‘Trends in Brief’ section.
With this week links to articles on, among other things, the land-based production of Atlantic bluefin tuna by German company Next Tuna. And hotel chain Four Seasons highlights the restaurants with a total of 32 Michelin stars within their chain.

Four Seasons celebrates 32 Michelin stars within its restaurant portfolio
Four Seasons, has confirmed its position as a leader in the culinary world with the most Michelin stars of any luxury hotel brand. With an impressive total of 32 stars in 25 restaurants in 19 hotels and resorts worldwide, Four Seasons stands out with 27 stars awarded to its original restaurant concepts. This recognition adds to its already extensive list of international restaurant and bar accolades, including 50 Best, La Liste, Gault Millau and Wine Spectator. Subway® announces largest master franchise agreement in brand history to expand presence in mainland China
Subway, one of the world’s largest fast-service brands, has signed a ground-breaking master franchise agreement with Shanghai Fu-Rui-Shi Corporate Development Co. (FRS) to expand its presence in mainland China. Over the next 20 years, FRS will open nearly 4,000 Subway restaurants in mainland China, growing the brand’s current market size more than sevenfold. Hertog Jan launches a new beer called Grand Pilsener with time as main ingredient
Hertog Jan, the Limburg brewery, has launched a new premium beer called Grand Pilsener in Dutch supermarkets. This is their first large-scale introduction of a new lager variant. The brewers took extra time to lager the beer, making “time” the main ingredient in Grand Pilsener, resulting in a rich and full flavor. The brewery believes Grand Pilsener offers a more relaxed drinking experience by combining the characteristics of specialty beers with the refreshing drinkability of a pilsner. Hotels for Trees and Lacoly collaborate for a more sustainable hotel industry
Lacoly has launched a WhatsApp service that allows hotel guests to skip the daily cleaning of their room and instead have a tree planted by Hotels for Trees, a foundation that aims to plant more than 1 million trees annually. This also allows hotels to create a more efficient cleaning schedule while allowing guests to make sustainable choices. Lacoly’s personalized communication platform also provides guests with information and special offers, contributing to a more enjoyable stay. Hotels for Trees, founded in 2021, aims to increase its afforestation efforts with Lacoly’s new service, which has already connected partner hotels.
City ID announces expansion into historic Baronesa in bustling Lisbon, Portugal
City ID, a growing group of apartment hotels, is expanding its international presence by transforming a historic palace in Lisbon into an apartment hotel, marking its sixth location. The Baronesa, a 16th-century building located in a lively neighborhood near popular landmarks, will undergo renovations in line with its history. The apartment hotel will have 88 well-appointed apartments, an indoor garden, a swimming pool, a restaurant and other amenities. Check out their website, link in the title.
Accor enters partnership with start-up Alltheway
Accor is partnering with start-up Alltheway to offer a solution that simplifies travel by transporting luggage between city centers and airports. Travelers can check in their luggage directly at Accor hotels and it will be picked up and transported to the destination airport. Alltheway provides accessible kiosks at Paris hubs and Charles de Gaulle airport for checking in luggage, with the service initially launching between the airport and four Paris Accor hotels. Land based production of Atlantic bluefin tuna in Germany
Germany’s Next Tuna is building the world’s first land-based source of Atlantic bluefin tuna (ABT). The company’s goal is to transform the tuna fish food industry into a circular, sustainable economy. Using a recirculating aquasystem (RAS), the company’s floating farms are protected from heat increases in the water, algal blooms, predators, and pollution. Waste from the system is collected for use as fuel or in seaweed production, and the farm itself is largely solar-powered. Next Tuna plans to offer three products and services. Summer concepts | Jack & Boule in London’s Southbank
Yesterday (15 June) Jack & Boule opened in London on the Southbank (behind the National Theatre). An outdoor bocce court with eight courts that can be rented for 55 minutes. You can also enjoy beer, wine, cocktails and street food there. You can even bring your dog! The concept will be open for five months.

Netflix is cooking up a culinary space, NETFLIX BITES! Opening on June 30 in Los Angeles and this limited-edition pop-up will spotlight acclaimed chefs from popular Netflix series such as chef Curtis Stone (Iron Chef: Quest for an Iron Legend), who will collaborate with other beloved Netflix chefs including Dominique Crenn (Chef’s Table, Iron Chef: Quest for an Iron Legend), Rodney Scott (Chef’s Table: BBQ), Ming Tsai (Iron Chef: Quest for an Iron Legend), Ann Kim (Chef’s Table: Pizza), Nadiya Hussain (Nadiya Bakes), Jacques Torres (Nailed It!) and Andrew Zimmern (Iron Chef: Quest for an Iron Legend). To top it all off, fan-favorite mixologists from Netflix’s Drink Masters — including Frankie Solarik, Julie Reiner, LP O’Brien and Kate Gerwin — will craft custom cocktails for the drink menu.
