Trends we spotted this week – week 32
At Horecatrends we spot a lot of national and international trends on a daily basis. We pick the most interesting ones to write articles about, the smaller trends we use in our column ‘Trends we spotted this week’. This week among others about a rooftop bar in London you will be able to sip a cocktail in the nude and Yannick Alléno about fermentation to enrich his sauces.

A naked rooftop bar is coming to London
Last week we told you restaurant The Bunyadi, the restaurant where you eat in the naked, closed earlier than expected. This week we read an article at the website of Secret London that London will get a rooftop bar where you drink your cocktail naked. It’s located right in front of Big Ben. The skyline is going to look a little bit different.
Great examples for an afternoon tea with a theme
We love the perfection of chefs in England who create their afternoon tea. We recently wrote about the ‘Children’s Afternoon Tea’ at the Langham in London. At the website of ‘Secret London’ we found an article with pictures from other afternoon tea’s, all with their own theme. Wouldn’t you love to sip your tea at the ‘Charlie and the Chocolate Factory afternoon tea’ at the One Aldwych? Or what about the ‘Science afternoon tea’ at the Ampersand hotel?
The taste of fermentation according to Yannick Alléno
An interview from Fine Dining Lovers with Yannick Alléno about his new cook book and his passion: sauces. He even devoted another book to this topic: ‘Sauces. Reflections of a Chef’ in 2014, in which he presented his very personal process of extraction. Today the chef goes even further by using fermentation to enhance his sauces. Great article to read for the real foodies!
One Michelin Star street food in Singapore
In July the first ever Michelin guide for Singapore has been released. There are 22 restaurants in total within the one star category. Michelin is synonymous for ‘high-end’ and luxurious settings but in the Singapore edition they gave two hawker stalls one star: Hong Kong Soya Sauce Chicken Rice and Noodle and Hill Street Tai Hwa Pork Noodle. A nice short (5 minutes) video about ‘The Story of HK Soya Sauce Chicken Rice and Noodle: the world’s first Michelin starred hawker stall’. Interesting development!
