Tartaria by Wolf Atelier
Chef Michael Wolf of restaurant Wolf Atelier in Amsterdam launches the first Tartaria in the Netherlands. Besides his normal lunch menu, guests now have the choice of various meat, fish and vegetarian tartars in various sizes. In addition to his selection of fine wines and bubbles by the glass, gin and tonics and juices this is an original addition to their current lunch menu.

During our holidays at Portugal last June, we had lunch at the Mercado da Ribeira (Time Out Market) in Lisbon. This food hall also has a Tartaria and the tartars looked delicious! Michael Wolf spotted the concept in Lisbon, maybe at the same spot. At Wolf Atelier he creates the first Tartaria in the Netherlands. The Tartaria by Wolf Atelier serves besides the classical and Asian steak tartare also tartars of salmon, tuna, grilled vegetables and eggplant. The dishes can be ordered in 100, 150 and 200 grams for lunch!
Inspiration
Another nice specialization with a twist … Early July we wrote about VITTORE C – the first carpaccio bar that will soon open in Tilburg. The girls behind VITTORE C. got the idea during their internship in Portugal. I have to admit that we also were inspired by restaurants in Lisbon and its surroundings. Speaking about specialization – if you visit Lisbon make a stop at Cascais (near Lisbon) and eat at a small restaurant, Polvo Vadio which speciality is squid. Make a reservation, they only have very limited availability. We got the tip from The Localpolitan. Although I don’t really expect this specialization will be successful in the Netherlands, they create delicious dishes! ^ Marjolein
