From a special cocoa menu to a full evening with star chef Enrique Limardo himself. Hilton Amsterdam has been a partner of the annual Chocolate Festival Amsterdam for 12 years. This year, the hotel is organising a number of culinary experiences and events focusing on the versatility of cocoa. For this, they joined forces with Venezuelan star chef Enrique Limardo.

Chocolate central to Hilton’s Half Moon Lounge and Roberto’s Restaurant menus

Until February 15th (just after Valentine’s Day!), Hilton Amsterdam will serve exclusive dishes inspired by cocoa in both the Half Moon Lounge and Roberto’s Restaurant, curated by internationally renowned chef Enrique Limardo. Limardo, a pioneer of modern Venezuelan cuisine, is co-owner and executive chef of several top Washington D.C. restaurants, including Seven Reasons, named one of the most talked-about restaurants of the century by Esquire, and the Michelin-starred Imperfecto.

Cocoa culture

Limardo combines traditional Latin American flavours with modern techniques, emphasising the cultural and culinary significance of cocoa. For him, cocoa symbolises his Venezuelan roots and he uses it to introduce others to his culture. The dishes Limardo created for Hilton Amsterdam highlight his innovative approach. At Roberto’s Restaurant, for example, a rich risotto is served with pecorino, pepper and caramelised cocoa nibs, or sauteed foie gras with guava and white chocolate compote. The Half Moon Lounge’s menu includes the Chocoa Smash Burger, featuring Oaxacan pineapple ‘mole’ with cocoa, a fried egg and Old Amsterdam cheese.

Love goes through the stomach | Intimate dinner with Limardo on February 4th

Besides culinary delights, guests can take part in exclusive events, such as an intimate dinner with Limardo on February 4th. During this evening, the chef will share his inspiration and vision on the role of cocoa in modern gastronomy. For Valentine’s Day, Roberto’s Restaurant offers a special cocoa menu in a warm Italian setting, complete with live music and a romantic ambience. And during the festival, the Half Moon Lounge will serve a tropical cocoa cocktail, with rum, cocoa and lime juice, and coconut sugar syrup, as an ode to the versatility of cocoa.

Chocolate Festival

Hilton Amsterdam’s initiatives fit seamlessly with the mission of the Amsterdam Chocolate Festival, which takes place annually at the Beurs van Berlage. This year on the 8th and 9th of February. The festival brings together professionals and enthusiasts and promotes sustainable innovation in the cocoa industry. With this special month, Hilton Amsterdam celebrates not only the versatility of cocoa, but also its collaboration with chef Limardo and the festival, which focuses on sustainability and fair production.
