Chez Claire | Haute éclairs and champagne

Dries Henau and Yuri Vandenbogaerde, or ‘De Jongens’ (the guys), behind the concept of the WASBAR, will open Chez Claire this spring. At Chez Claire they will sell luxurious ‘haute éclairs’ as you can’t find them anywhere else in Belgium and they will open simultaneously in Antwerp and in Ghent. If you like éclairs, some new addresses if you’re visiting one of these cities!

A Reiger is a heron in Dutch and over the years, the heron has become an important part of Amsterdam’s city image.

The recently opened restaurant LEUK (FUN in English) is located in the area around the Houthavens on the Danzigerkade nr. 8 in Amsterdam. A restaurant that is LEUK (FUN) for both parents and children. Good food from an international menu and a special menu for children. Restaurant LEUK already has a location in Bussum for more than seven years. At their new location in Amsterdam they have a children’s playground of in total 150 m2 including a babysitter!

They have been famous for their Christmas decorations for years now and they have a lot of old videos to proof that! In the heart of Utrecht on the Bakkerstraat 7, Désirée Stroes and Brian Steevens opened their Croquetten Boutique last November. The enthusiastic entrepreneurs sell croquettes in all shapes and sizes at this location. How about the following croquettes: ‘Pumpkin & Sage’, ‘Apple & Cinnamon’, ‘Mushroom & Parsnip’ or ‘Chicken & Red Curry’. You can also order a tasting of 6 small croquettes. Of course, they also have the original croquette on the menu, handmade and fresh! For the Holiday Season they have a special ‘Hazenpeper’ Croquet (with kind of Hare Stew). Another example of hyperspecialization.

Early November I received an app from my daughter from New York with the question if I had already written about the trend ‘cauliflower as substitute for chicken’. Seems to be popular in New York and you have to think of cauliflower prepared as buffalo wings or dishes like ‘General Tsao cauliflower’ instead of chicken. Since then I came across a couple of examples, time to start being creative with cauliflower as substitute for chicken!
Sachi | The world’s first alcoholic beverage made from tofu whey

Patent filed for unique zero-waste approach of converting by-product of tofu making into alcoholic drink. A research team from the National University of Singapore (NUS) has successfully turned tofu whey, a liquid that is generated from the production of tofu and is often discarded, into a tasty alcoholic beverage which they named Sachi. The innovative fermentation technique also enriches the drink with isoflavones, which are antioxidants that have many health benefits.

In the pop-up store you can make your own KitKat bar, or as their slogan says ‘Create your own break’, until December 23rd. Last month we wrote about the Christmas ornaments from The Lakes Distillery. They give the Christmas tree an alcoholic touch with Whiskey Christmas ornaments, or Christmas ornaments filled with The Lakes Vodka or The Lakes Gin. We already suggested that it is quite a nice idea to serve a cocktail in a Christmas ornament. Last weekend I had my first ‘Christmas dinner’ with friends and based on the Christmas ornaments from The Lakes Distillery, I also filled a small Christmas ornament with a Christmas cocktail, wrapped it in a gift box and served with the starter. Simple and tasty!

Claridge’s, London’s legendary Mayfair hotel has unveiled the Claridge’s Christmas Tree 2017 in the hotel lobby, designed by Karl Lagerfeld, widely regarded as one of the fashion world’s most influential creative forces. This year’s Claridge’s festive installation is inspired by Lagerfeld’s childhood memories of Christmas with a series of inverted spruce Christmas Trees placed around the hotel lobby. The centrepiece is a sixteen foot high inverted tree with silver gilded roots topped with a multi-facetted mirrored star which reflects rays of magical light across the art deco lobby. Fazer Cricket Bread | Finnish bakery launches ‘crunchy’ insect bread

Since the 24th of November you can buy cricket bread in Finland. One of Finland’s largest food companies, Fazer is selling this crunchy cricket bread. According to Markus Hellstrom, head of the Fazer group’s bakery division, one loaf of bread contains about 70 dried crickets. The crickets are grounded into powder and added to the flour.
