Mr. Berry’s is an online e-commerce platform where a consumer can discover his or her own personal coffee taste through a machine learning algorithm. A machine learning algorithm? Machine learning is used all around us to allow consumers to make choices. Spotify does it with your music. Youtube works with your related videos. Your bank uses it to monitor your expenses. But the biggest example of this is of course Google.
Mr. Berry’s applies 21st-century technology to an outdated coffee market. An initiative of Floris de Laat who organized the pop-up ‘The Cone Masters’ in 2017. With this pop-up you could, very Instagrammable (#coffeeinacone), drink your coffee from an ice cream cone filled with chocolate. He now wants you to enjoy coffee that suits your taste.

Zero-waste restaurant SILO | Second location opened in London

Yesterday, Wednesday 13th November SILO, the world’s first zero-waste restaurant SILO by award-winning chef Douglas McMaster, joined CRATE Brewery, in their Hackney Wick home, The White Building. A zero-waste pioneer, Douglas’ innovative approach is threaded throughout the whole restaurant and its supply chains: from trading directly with farmers to composting any leftover scraps into compost, the continuing aim is to ‘close the loop’ in the food production process.
Back in 2014 we wrote about restaurant SILO in Brighton, back then had just opened his restaurant after being funded with crowdfunding, so it’s great to notice that the sustainable initiatives of chef Douglas McMaster pay off.

A new system launched by Dutch start-up Order-Catch gathers all online food orders from all delivery marketplaces, including their own website, in one central overview on the computer, tablet and cash register system of the user.

Cheese conveyor belt take over | Pick & Cheese invites heavyweights of cheese

Pick & Cheese, the world’s only cheese conveyor belt at Seven Dials Market, will play host to some of the biggest and best names in cheese with ‘Heavyweights of Cheese’, their new series of one-off belt takeovers. Kicking off on Wednesday 27th November with Paxton & Whitfield, the UK’s oldest cheesemonger, the series will see each guest cheesemonger take over the belt for one night only, showcasing their signature cheeses with unique condiments, hot dishes, desserts and a selection of drink pairings.
Heavyweights of Cheese will be a non-ticketed event, available on a first-come first-served basis running from 6pm till 10pm. The belt take over will be by: 27th November: Paxton & Whitfield; 29th January: La Fromagerie; 26th February: Neal’s Yard Dairy and 25th March: Mons Cheesemongers. Great collaboration!
Dubbel Dubbel Toil and Trouble | #PumpkinRescue campaign after Halloween

15 million pumpkins were carved but not eaten last Halloween – symbolic of a systemic food waste epidemic. Toast Ale, Hubbub and Brewdog Tower Hill Outpost want to change that. The 4th of November they brewed seasonal beer that tackles seasonal food waste as part of Hubbub’s annual #PumpkinRescue campaign.
Although Halloween isn’t that big yet in the Netherlands we have a lot of pumpkins as well. We already loved the idea of Toast Ale and their initiative for the pumpkin ale, Dubbel Dubbel Toil and Trouble, is another food waste initiative we love to write about!
BYOC | Duebest sustainable, Fair-Trade reusable cutlery

Bring Your Own Cutlery (BYOC), an idea by Duebest, a brand on a mission to end single-use plastic utensils starting with Fair-Trade reusable cutlery to launch on the crowd-funding site Kickstarter. Duebest is a new Brooklyn-based brand that starts their sustainable initiative by selling their sleekly designed fork, knife, spoon, and chopstick sets. All made from sustainably sourced teak wood and hand-crafted by Fair Trade artisans in Bali. The set comes in a compact fabric case and retails for $35. Exclusive glass straw upgrades are available for $5 more.

The Borough Market Kitchen in London | New communal dining space

The Borough Market Kitchen will open Monday 18th November at the same day the Borough Market celebrates 21 years as a central pillar of London’s food community. The Borough Market Kitchen will be their new communal dining space, in which they will welcome over 20 food traders dedicated to cooking with the best of the market’s seasonal produce, with familiar favourites such as ‘Arabica’ and ‘Horn OK Please’ sitting alongside newcomers including ‘JUMA Kitchen’ and the all new ‘Batera pintxos bar’ from ‘Mimo London’.
So if you’re going to London in the Christmas season, you’ll have another hip place to have lunch!
The Rooftop Winter Cinema at the Berkeley Hotel in London

Overlooking the rooftops of Belgravia and Knightsbridge, and with sweeping views of Hyde Park and Winter Wonderland, The Berkeley’s rooftop garden will once again transform into a twinkling festive forest cinema. Guests will snuggle into wooden huts laden with blankets to watch Christmas classics on the big screen whilst warming up with a menu of alpine and winter favourites and flowing Laurent-Perrier champagne for a touch of extra sparkle. Screenings of festive favourites like ‘Home Alone’ and ‘The Holiday’ at the Rooftop Winter Cinema will take place from 15th November ~ 31st December 2019. Reservations will open today, November 4.
Great idea for other hotels with rooftops in the holiday season! Even cinemas could work together with restaurants to surprise their guests with the combination of watching a great ‘holiday season’ movie while enjoying a great meal.
Amsterdam Noord has its own sustainable YOTEL for techsavvy travelers

Today, Monday 4 November YOTEL, the innovative global hotel brand for smart, techsavvy travelers, will open its doors in Amsterdam Noord. Complete with an all-day dining concept, a stunning deck and a one of a kind outdoor cinema, the 202-cabin hotel offers a slick experience enhanced by clever use of technology and sustainable design at a surprisingly affordable price. The brand’s first hotel in mainland Europe, YOTEL Amsterdam Noord is at the epicentre of the up-and-coming Buiksloterham neighbourhood, built on the sunny bank of the Tolhuis Canal. We wrote a couple of articles about YOTEL and this brand is expanding in a fast pace, next year they will open their first YOTELPAD, YOTEL’s name for condo, which will open in Park City (ski resort in Utah), followed by Mammoth (2021, ski resort in California) and Miami (2021). These pads will be located in city centre and resort locations. Guests will be welcomed in private PADs which are the epitome of efficiency.

Cruise Whitsundays has announced the opening of Australia’s first underwater Reefsuites on the Great Barrier Reef. Guests will be able to stay overnight in one of two underwater Reefsuites from this summer. Each private Reefsuite showcases spectacular panoramic views of the reef’s marine life, including tropical fish, turtles and manta rays. Guests can choose between premium king or twin single accommodation below sea level, complete with private glass en suite. The full Reefsuite experience includes a return cruise out to the reef, all meals and beverages, a selection of marine activities and overnight accommodation.

We know who’s going to design the Christmas tree of the Claridge’s hotel in London! We still think it’s a great opportunity for local designers and hotels to seek some free publicity. Most certainly if you give a party the day you will light the tree some hotels combine this with a donation to a local charity.

Pop up Grand Kobel in Vienna | In a forgotten Viennese ballroom

Restaurant Taubenkobel, located on Lake Neusiedler in Austria, has an annual tradition of creating a pop-up in and around Vienna when it becomes quieter on the lake. In recent years they have held these pop ups in a train hangar (Lokvogel, 2018), in an old post office (Brieftaubenkobel, 2017) and this year the pop up takes place in an old ballroom in the former Donauhof Hotel in Vienna’s 2nd district. Restaurant & hotel Taubenkobel is a member of Relais & Chateaux and chef Alain Weissgerber has 18 out of 20 points in the Gault Millau of 2019.
From November 15 to December 21 you can enjoy the Christmas atmosphere in Vienna and enjoy culinary delights at pop up Grand Kobel. For hospitality entrepreneurs, it is a cool idea to visit your guests with a pop up at a special location. In our opinion, pop ups from chefs from outside the region in the west of the Netherlands would also do great in Amsterdam or Rotterdam!

Neo Fruit | A collection of artificially designed fruits made with 4D printers

Fruit can provoke emotions and desires, have a perfect natural packaging, use colours to indicate which minerals and vitamins they contain, what their flavour is, and how ripe or rotten they are. A whole world of visual, sensual, nutritional and practical experience bundled together in each fruit. The creator of Neo Fruit finds this full sensual eating experience is missing in food supplements produced nowadays. He created ‘Neo Fruits’, artificial fruit, produced with 4D printers technology, using cellulose, an organic material. Neo Fruits intends to offer a food of the future that considers shape and content as critical factor for the eating experience.
Designed by Meydan Levy, an industrial designer from Israel. And we spotted it through the event for Biodesign, the future of materials, manufacturing, architecture & fashion: #BiodesignHereNow by Open Cell. Would we be eating fruit this way in the future? Or take our food supplements? It most certainly looks more appealing than a powder or capsules!
Carlsberg Green Fibre Bottle | latest update on their ‘paper beer bottle’

During the C40 World Mayors Summit in Copenhagen, Denmark, the Carlsberg Group issued an update on its journey to create the Carlsberg Green Fibre Bottle, the world’s first ‘paper bottle’ for beer. Made from sustainably sourced wood fibres, it is both 100% bio-based and fully recyclable. The Group also announced it has been joined by other leading global companies that are united in their vision to develop sustainable packaging through the advancement of paper bottle technology.
These developments are a continuation of Carlsberg’s sustainable packaging innovation journey and a key part of its sustainability programme, Together Towards ZERO, including its commitment to ZERO carbon emissions at its breweries and a 30% reduction in its full-value-chain carbon footprint by 2030.

Global icon Barbie just added ‘Host on Airbnb’ to her extensive list of careers and accomplishments! Later this month, Barbie will hand over the keys to her Malibu Dreamhouse for the ultimate fan stay. Located in the heart of Malibu and overlooking the Pacific Ocean, the fabulous life-size Barbie Malibu Dreamhouse was be available to book on October 23 by one guest and up to three friends for a two-night stay. The one-time reservation will take place from next Sunday, October 27 to Tuesday, October 29.
Of course we have seen more hotel rooms that were designed for the ultimate Barbie fan or for fans of artists, etc. Airbnb regularly uses special, one-time locations that receive a lot of attention worldwide in the press. In addition, they often combine such a stay with a good cause, in this case “The Barbie Dream Gap Project GoFundMe initiative’. If you read this as a hotelier, which room could you regularly change and thereby create attention for your hotel?
Petco’s In-Store Kitchen for dogs

New York City just saw the opening of its first in-store kitchen for dogs, Petco (the largest animal store imperium in the US) has offered fresh food for dogs since 2010 but only now opened the first place in America where pet owners can go in store and see chefs prepare food for their beloved dogs live in front of them. If you think this sounds a little nutty, you might think twice: NYC is only the flagship – this type of fresh dog food is for sale on 25 locations in New York State alone!
New nhow hotel Hamburg will be build on the bunker St. Pauli

NH Hotel Group’s has plans to open a new nhow hotel built on ex Nazi bunker in the city of Hamburg in 2021 an it’s set to be one of Europe’s most emblematic hotels. nhow Hamburg joins the brand’s pipeline of seven establishments, with three of the planned new hotels – in London, Amsterdam and Brussels – due to open their doors in 2020.
The amazing bunker, right in the heart of the city, will extend over five storeys in the shape of a pyramid, which will house the hotel rooms. One of the project’s most eye-catching features is the landscaping plans: a spectacular roof-top garden, in all likelihood one of a kind in Germany. The hotel will enjoy fantastic panoramic views of Hamburg, in the line of sight of the Elbphilharmonie and a leafy and meandering green walkway that will surround the bunker.
Stroodles, the pasta straws | Say ‘Pasta la Vista’ to Plastic and Paper Straws

A pasta straw company, Stroodles, has launched pasta straws to provide an environmentally friendly solution to the singe-use plastic crisis and rise of greenwashing from the paper straw industry. In comparison to soggy paper and plastic straws, Stroodles are an improvement as they provide greater durability, are flavourless, vegan, 100% biodegradable and are edible raw or cooked after use. A core principle for Stroodles is their ‘drink-easy’ ethos, meaning drinkers don’t has to change behaviour or compromise on drinking experience to do good for the environment. The straws are 23-25 cm long, 0.75cm thick and the pasta straw walls will last over an hour in any one drink and remain flavourless! And they’re biodegradable in hours not generations!
Another alternative for plastic straws which we can add to our list! And we think at least every Italian restaurant should use these stroodles!
