Poptails

5-3-2015

Poptails, the summer funs at Sky Bar, Bangkok’s highest rooftop bar at the Lebua State Tower hotel. Poptails are premium classic cocktails paired with brain-freezing popsicles. ‘Poptails’ derived from the two words – popsicle and cocktails.

Poptails are made of…

The master mixologist at ‘The Dome’ at the Lebua State Tower hotel created the poptails to create fun and excitement around his cocktails! Premium is referring to the base spirits – the Havana 3 Years Rum, Absolut 100 Vodka, Olmeca Tequila and Plymouth Gin – that are used to create these cocktails. They serve a Rocky Road Martini: (Chocolate martini) – 1.5 oz Absolute 100 Vodka – 0.1 oz white chocolate liqueur – 0.5 oz hazelnut liqueur, rimmed with dark, Dutch chocolate and garnished with a Rocky Road Popsicle made of chocolate, marshmallow, peanuts, water, simple syrup and milk.

The other cocktails which are served with a popsicle: Berrymania (with a creamy berry / lemon popsicle), The Clover Pop (with a pineapple popsicle) and The Pop Star (with a melon and raspberry popsicle).

The Sky Bar

Due to the Sky Bar’s innovative cocktails, striking atmosphere and spectacular views, it earned the distinction of being named “the most stunning rooftop bar you’ll ever see” by The New York Times and is one of the highlights of Bangkok’s nightlife scene. So, if you’re planning to go to Bangkok, this is the place to drink a cocktail. They also serve a Hangovertinis, a cocktail created for the cast of ‘The Hangover Part II’ while they were filming at Lebua. This cocktail has gone on to become Thailand’s signature drink.

As said the view is amazing and the cocktails at the Sky Bar are delicious! I know, it’s one of those places I can say of: ‘Been there, done that’. But unfortunately they didn’t serve the popsicles then, so I don’t mind going back! ^Marjolein

Dishes of amateur cooks on your menu

23-12-2014

  • Hobbykoks

Hotel-Restaurant Oostergoo (Grau, Friesland, The Netherlands) inspired us with their search for the tastiest meatball and ‘snert’ (a famous Dutch pea soup) to place on their lunch menu. If campaigns like is are done right, you can reach a lot of potential guests. Especially if you involve local food bloggers.

Meatballs and ‘Snert’ on the lunch menu

Restaurant Oostergoo started a competition to find the best home-made meatballs and snert. On 13 December, the meatballs and the soup were tasted by the famous Dutch chefs Joop Braakhekke and Albert Kooy to assess whether the dishes would fit in a restaurant as well. This because the winning meatball and snert will be on the lunch menu at the Hotel-Restaurant Oostergoo. The winners are Mr. Scholten de Weerd (meatballs) and Ms. Gerda Uiterwaal (pea soup).

Dishes of amateur cooks on the menu

The amount of variations of food competitions you can think of are of course numerous. But especially with the huge amount of amateur cooks and the popularity of cooking it’s not difficult to create your own theme. Enthuse the local press to pay attention to your search for a great dish, have a (local) celebrity judge the dishes and leave a spot (or a few) free at your menu. And of course, make a party from your food competition!

Winter garden in Amsterdam

  • Wintertuin(1)
  • Wintertuin (2)
  • Wintertuin (3)
  • Wintertuin(4)

How do you use your outdoor area during the cold days? Do you transform it into a cozy winter garden or do you prefer a skating rink on the roof terrace? For three months Restaurant & Bar Herengracht changes its outdoor area into a winter wonderland. With heaters, fire places and a semi-roofed terrace it is a nice place to be during these dark days.

The Winter Garden Amsterdam

The Winter Garden is open from late November till late February 2015. There will be three matching winter events, each with a cool theme.

Typical wintry

At the terrace the temperature will be a few degrees higher than on the streets. Not only the ‘heaters’ cause these higher temperatures, but also by the nose warming winter cocktails, mulled wine and hot chocolate served from the special outdoor bar. Typical wintry snacks and dishes like homemade pea soup, cheese fondue and game completes this winter concept.

Three special winter events

The winter garden will set the stage for three events at Restaurant & Bar ‘Herengracht’, which is located near the ‘Koningsplein’ in Amsterdam. The first event will be hosted in Christmas spheres on 20 December, the second event highlights the theme ‘let’s go wild’ on 24 January with wild boar on the spit, the final special is a huge cheese fondue party.

The Tree Lighting Party by The Pierre New York

5-12-2014

  • Tree Light Party

Last weekend I happened to see a tweet of hotel The Pierre New York which invited its followers to The Pierre’s Holiday Tree Lighting Party. The Pierre New York, celebrates the lighting of their Christmas Tree by offering their guests a free cocktail if they take a little toy for charity!

We have recently written an article about the Christmas trees at the Claridge Hotel in London. For several years already they invite great designers to decorate their Christmas trees. They also organize a Tree Lighting Party just as the large department stores in London, New York and the ‘Bijenkorf’ in the Netherlands celebrate their ‘window lighting party’, since a couple of years.

Combine the Tree Lighting party with charity

The Pierre New York Hotel is trying to tempt guests to take along a toy for charity. A couple of years back I read about parties in Hollywood where Christmas trees decorated by celebrities were auctioned for charity. Nice idea to create a similar auction with your local celebrities!

Map allergens via Ingredient Information Netherlands

13-11-2014

  • Ingrediënten Informatie Nederland

Within exactly one month, every food provider in Europe is obliged to be able to tell his customers or guests which allergens are processed into a dish or product. It’s a complicated matter and time consuming to have to determine this yourself. Ingredient Information Netherlands supports.

The solution

Ingredients Information Netherlands (IIN) connects the allergens, but also the nutritional values and the E-numbers, to the products you use. Based on this information they give an insight in which allergens, nutritional values and E-numbers that are processed in your dishes. IIN provides you with the solution for the provision of allergen information within your organization; it does this for large or small restaurants, hotels and catering companies.

This is how IIN works

The philosophy behind the IIN software; ‘being transparent in a simple way about all the allergens in food’. The software design is based on your menus, recipes and the products involved and thus provides a custom made ingredients-information package. In addition to allergens you can also gain direct insight into the nutritional values (required by law in 2016) and the E-numbers. In short IIN makes the link between the information provided by your suppliers’ raw material specifications and your own recipes in one database. Through your own ‘My IIN’ you have a quick insight in which allergens the products contain in both your dish and menu. You can print the results and process in a separate allergen menu, display the information on a tablet or smartphone, or even mail it to your guests.

100% custom made

So no sheets of paper, but a web based solution. That means you have access to the information via a PC, tablet or smartphone. The system saves time, you meet the legal requirements, you can receive guests who suffer from food allergies and you create added value for nutrition-conscious guests. Check out the website of IIN, it’s possible to experience the capabilities of Ingredients Information Netherlands in a demo environment.

10 times pizza inspiration

3-11-2014

  • Pizza met truffelPizza met verse truffel

Inspired by the pizza chain Domino’s Pizza that recently started selling pizza’s with a sausage in the edge of the pizza and sauerkraut as an ingredient and the success of pizza rolls and bagels, we’ve made a top 10 pizza inspiration varieties which we as guest really love to eat.

Pizza with fresh truffle

Recently I ate a fresh truffle pizza at a great lunch/brunch spot on Sunday in the Marais, Paris. At Le Dome du Marais they serve a ‘Pizza a la Truffe Noir, fontina & frisee blanche’ (Pizza with black truffle, fontina cheese and frisee salad).

Pizza with fresh tuna

Although more a flatbread or our flammkuchen variety, we ate a great flatbread with fresh tuna with a hint of shiso and truffle oil in Las Vegas. The perfect combination between Japan and Italia. The Yellowtail Japanese Restaurant & Lounge at the Bellagio hotel serves this great pizza. Friends already told us in advance; after having eaten one, you will order another one!

Meanwhile I understood that restaurant Le Garage in Amsterdam serves a similar pizza! We will definitively come to taste this version as well!

Breakfast pizza

We already wrote about it in 2010, a branch of Domino’s pizza in Ohio started to serve a breakfast pizza. Last summer we had breakfast pizzas at various locations in America. The breakfast flatbread at the ‘Butler-style’ Sunday brunch in restaurant La Cave at The Wynn Hotel in Las Vegas was truly delicious, a rectangular piece of flatbread with a chef’s selection of ham and eggs. In the Netherlands we know that restaurant City Hall in Leiden serves a breakfast pizza with 3 eggs and bacon as well.

The Tandoori Spice Pizza

In the most recent newsletter of The Food People we read that pizza chain Papa John’s in England did bring a new pizza on the market in collaboration with producer Patak’s; The Spice Tandoori Pizza. The pizza is topped with authentic Indian-inspired ingredients such as Phal sauce, double Tandoori Chicken, green peppers, red onion, tomatoes and mint raita.

Deep dish pizza from Chicago

The Deep Dish pizza is a mighty and truly a pizza for big eaters! I ate it by Giordano’s in Chicago, hometown of the deep dish pizza. A smaller version would likely be better for the Dutch market, while the bigger one can be advertised as a ‘pizza to share’.

Flatbread or the European version; flammkuchen

Since 2013 more and more flatbreads, or the German variant ‘flammkuchen’, are served in the Netherlands. This lighter version of a pizza is often used in America as ‘skinny pizza’. For example, The Cheesecake Factory has a separate menu, ‘skinnylicious’ with some skinny flatbreads for those who want to eat less calories.

Eat healthy, pizza – with seaweed

We wrote about it in December 2013; Healthy pizza has toppings like mozzarella, cheddar cheese, cherry tomatoes, red pepper and garlic powder. The company made the pizza healthier with a secret ingredient, they added seaweed, a healthy alternative to salt. An average frozen pizza contains 300 calories and 13 grams of fat, the pizza by ‘Eat Healthy’ contains 172 calories and 5.3 grams of fat. It is introduced in England and Wales.

Pizza on a stick and in a cone

The Italian company Hasta La Pizza has introduced the ‘pizza on a stick’ at the Anuga fair in Cologne in the end of 2013. The ‘pizza on a stick’ is designed for the on-the-go market. Hasta la Pizza is available in the flavours Margherita, ham and salami and comes in packs of 60 grams. Kono pizza sells its pizza already several years in the form of a cone. They are sold in 16 countries, but not in the Netherlands yet, although they’re sold on Aruba.

Pizza gourmet

We wrote about it in May 2013; Gourmet Pizza. The Italian ‘Pizzafestijn’ Catering serves a pizza-gourmet besides Italian snacks and a live cooking buffet with pizza appetizers. With the pizza-gourmet guests can cover small fresh pizza bases with pizza sauce and ingredients of choice. These mini pizzas are baked in a small pizza oven.

Bugs on the pizza

We can now start to uses insects on pizzas as the insects are also on the shelves at the supermarket in the Netherlands ((Supermarket Jumbo in Groningen). Early 2010 an Australian pizza maker did this also when the country was hit by a plague of locusts.

Storytelling around the menu at DiverXO

22-10-2014

To promote the opening of restaurant DiverXO (3 Michelinstars, chef Dabiz Muñoz) at the NH flagship hotel in Madrid, this inspiring movie has been published. In the film, six guests are bored at first, but go wild after eating the creations of the chefs. The chefs show how the dishes are prepared and presented as well.

Passion, emotions and experience around the table.

The movie shows passion, emotion and experience in a modern and artistic way. Storytelling to the max. You want to have dinner at the restaurant with the most dull people you know, just to experience their change while eating and drinking! The video takes about 10 minutes, but it’s definitely worth watching.
