We already spotted the date of opening on Instagram last week and mentioned it in our Trends we spotted week 5’, but it’s now official, on Monday 14th February 2022, one of the world’s best pastry chefs will open the doors to his first patisserie outside of France, Cédric Grolet at The Berkeley.

From Valentine’s Day at 8am, the chef’s world renowned creations will be available to takeaway, including Grolet’s famous trompe-l’œil, fruit and flower cakes. The patisserie – which is almost lab-like in its aestehetic with touches of gold and is designed by renowned interior designer Remi Tessier – has a central focal point: The Chef’s Counter which will host a globally exclusive dining experience inside the lab, set to wow Londoners and beyond.

The first 1,600 Neder Bananas from Wageningen University & Research in the Netherlands were harvested at the end of November. Many atypical and sustainable products are made of them! Ever heard of ‘National Cookies Day’? We didn’t, but this day is celebrated on December 4th and Subway opened a ‘Cookieway’ pop-up store around this date.

The fast food chain ‘El Pollo Loco’ is launching a ‘Loco Gifts and Gear’ store in which they sell merchandise specially designed for them, such as a bicycle. And the UK’s cheapest champagne bar has opened, Aldi will sell its award-winning Veuve Monsigny champagne for just £2.33 a glass. And so nice: a ‘Santa sushi’, created by Wave Asian Bistro & Sushi out in Mount Dora, Florida.

Airbnb had a special Christmas promotion in the USA: 4 people could be guests for one night in the ‘Home Alone’ house! Including lots of details like the cheese pizza and Kraft Macaroni & Cheese.

In London you can enjoy the patisserie of the French chef Cedric Grolet in The Berkeley Café and when you are in London now you can enjoy a special ‘Borealis’ by the famous artist Dan Acher for 2 more days. Northern lights above London during the Winter Lights season, we would love to see that above Amsterdam as well!

 Uber Eats was the first to deliver meals to space on December 11! And have you heard of PappaRoti? They sell drinks and special coffee buns from Malaysia in more than 400 locations worldwide. Located in Brussels, among others.

We have been sharing inspiration on our website since 2007, inspiration that we find in the hospitality industry or by online spotting of what our colleague hospitality entrepreneurs all over the world are doing. If you search our website for ‘Christmas’, you will get pages full with examples like glitter gravy, the Christmas afternoon in Hengelo to storytelling by the Rocco Forte hotel chain under the name of #RFWinterTale.

Our last real Christmas publication was ‘Christmas Gestures’ back in 2013, containing examples of ‘golden cutlery’ or ‘golden Japanese sticks’, ‘golden fortune cookies’ but also pizza slices and pizza boxes in the Christmas tree. For our 2021 publication we went to find inspiration for decorating a Christmas tree for in restaurants, fast food chains, bars or hotels at FAAS Est in Leiden. A great shop that sells all kinds of food ornaments. Check out their photos on the front page of this years publication. In ‘Christmas inspiration 2021’ we particularly mention inspiration to celebrate Christmas outdoor, a safe way to have fun with your guests this Holiday Season.

The twelve days of Christmas – what will McDonald’s US sent to their customers? Each day from Dec.13 through Dec.24, U.S. customers can get a different menu item for free from the Mariah Menu on the McDonald’s app with a $1 minimum purchase.

Another example of marketing with a celebrity, in this case Mariah Carey who takes the Holidays up an octave with 12 Days of McDonald’s® deals. Inspiration for more local deals with celebrities? We only sorry that she doesn’t sing in their commercial! And of course that the Mariah Meal isn’t available in Europe.

On American inspiration websites you can’t miss Halloween. Halloween is major in the US and slowly but surely more and more people in the Netherlands are celebrating it too! In our Dutch village it will be celebrated as well. The organization normally responsible for our King’s Day celebration will this year also organize a Halloween spooky tour along ‘haunted houses’ where the children get hot chocolate and can pick up ‘creepy’ candy. Such a fun night! How can you celebrate Halloween as a hospitality provider? Would you profit from a celebration and would your Dutch or European guests enjoy it? The last point is of course clear; it is fun and it always makes sense to positively surprise your guests, even if it is with a freshly baked ‘ghost’ cookie or a mini pumpkin of marzipan.  Starbucks opened their 10th ‘farmer support’ centre in VarginhaBrasil with the purpose to offer valuable resources to local coffee communities. 

 UPSIDE Foods partners with three Michelin star chef Dominique Crenn. Crenn will develop recipes and give culinary advise and if allowed she will use the lab-grown chicken in her restaurant. This is the first collaboration in the cultivated meat industry with a three star Michelin chef. 

 De Koningshoeven brewery is the first in the world to market a completely alcohol-free Trappist beer: La Trappe Nillis (0.0%). And McDonald’s published their Purpose and Impact Report of 2020-2021 with four impact points: Jobs, Inclusion and Empowerment, the Plant, Food Quality & Sourcing and Community Connection. 

 Duke’s Mayonaise started collaborating with Champion Brewing Company to produce the perfect beer that fits with a BLT sandwich: Family Recipe (5,1% ABV, 27 IBU). Kind of ‘Mayo Beer’. The new ‘food shopping’-app, Grownby, connects farmers with buyers. Wouldn’t it be great to have  such an app as a cook? And getting messages like the strawberries are now ‘ready to eat’!

 CandyCan gummy bears are gluten-free, plant-based, low-sugar, low carb and contain vitamins. Is it an idea to lay a bag of Gummy bears on top of a pillow for children visiting your hotel? Or to put a bag in a ‘Happy-Meal’ kind of box?

 Oreo opened their first café in New Jersey. The café consists of a shop offering Oreo cookies and other Oreo treats, and fast-service where you can order Oreo treats. And in New York another sweet hybride is gaining popularity: the Croffle. This is a soft, buttery and layered croissant toasted in a waffle iron and sprinkled with different toppings.

Recipe box service, ‘On The Table’, has recently announced their partnership with digital payment blockchain platform Utrust, making them the first UK food delivery provider to accept cryptocurrency alongside traditional payment methods.

Eli’s Cheesecake in Chicago celebrates ‘national cheesecake day’ with citywide treasure hunt and free cheesecake! A great way to celebrate a lot of things! Check out how in the article. And At Dominique Ansel’s Workshop you can buy eight varieties of croissants and follow a workshop in the test kitchen! , including one stuffed with Black forest ham and fontina cheese, and topped with melted Gruyere; rethinking the breakfast sandwich!
