The humble sandwich | Bombay Bustle brings the Bombay sandwich during the British Sandwich Week

To celebrate British Sandwich Week, from 20th to 27th May, Bombay Bustle, the Indian restaurant in Mayfair from Samyukta Nair, will create a menu dedicated to the much-loved British institution: the humble sandwich. The menu will center on the classic Bombay sandwich, the famed street snack which is as much of a Mumbai staple as the stacked tiffin tins and hectic railway system that have inspired Bombay Bustle. From a modest three-ingredient sandwich to a towering grilled ‘toasty’ stuffed with cheese and chutney, every day thousands of Mumbaikers grab a piping hot sandwich straight from the chimta at one of the city’s many stalls. Speakeasy and storytelling | Foxglove and Mrs. Pound

The team behind the Ming Fat House of Jonathan Bui has created a speakeasy whisky bar in the business district of Hong Kong. They used local architect Nelson Chow Chi-Wai, to create the bar based on the story of a wealthy English adventurer, Frank Minza, who is the illegitimate son of an entrepreneur from Hong Kong’s Colonial days. He travelled the world in search of adventure and all things beautiful. However, what he never captured was the heart of his beloved, so he created Foxglove, named after his lost lover’s favourite flower, to win her back. That’s the storytelling around the speakeasy Foxglove in Hong Kong. It’s the second speakeasy of Ming Fat house in Hong Kong, the first is Mrs. Pound, a restaurant hidden behind a Chinese stamp shop! The story behind Mrs. Pound; she was a burlesque dancer who fell in love with a Chinese stamp shop owner. read more

Haute Friture Snack Bar Tante Nel (Aunt Nel) in Rotterdam launches its first ‘SpeakFrietje’ (freely translated: SpeakFries) on Friday 28 July. The Snackbar 2.0 with alcohol license, invites residents of Rotterdam for this new Friday drink on their 80m2 large terrace. read more

Russian Cuisine | At Teremok in New York

Last month I visited Tribeca, not in New York but in a small town in the Netherlands, Heeze. At restaurant Tribeca (two Michelin stars) we ate a delicious, chefs version of Borsch, the famous Russian beetroot soup. It tasted so great that I went looking for a recipe and while searching at Google I found an article at The New Yorker about the opening of the first Teremok restaurants outside of Russia in New York City at Union Square and Chelsea. One of the unique characteristics of fries is that you can endlessly combine them with different ingredients. Fries with caviar, Parmesan cheese, truffle mayonnaise, chocolate, Nutella and stews. In the Netherlands, fries are very popular. We eat them with mayonnaise or ketchup but also with ‘mayonnaise, curry sauce and chopped onions’, with hot peanut sauce or sometimes even with truffle mayonnaise but the fries noted below aren’t often on the menu! In response to an article in the Dutch AD newspaper about Tante Nel (aunt Nel), the haute friture shop in Rotterdam, we made a list of unique and weird combinations with fries. ^Bram Kosterink read more
