Stracciatella | The evolution of Mozzarella

Quite a few years ago it started in Italian restaurants, Mozzarella became the most popular cheese imaginable, even as popular that you started seeing it on menu’s in restaurants all across the board, all across the globe. Then a couple of years ago we started seeing Burrata everywhere, a real delicious cheese that was even softer and better than Mozzarella and these days you can order it everywhere so time to up the ante: Stracciatella! Stracciatella di bufala are small bits of curd and the word means as much as ripped or shredded. Stracciatella is white like its predecessors and is best explained as the inside of the Burrata. Its origins are from the region of Puglia. So don’t worry we are not talking about the cheese and chocolate ice-cream flavor! This soft beautiful cheese is now taking over menus globally! This month Meriel Armitage’s Club Mexicana and The Spread Eagle, London’s first 100% vegan pub in Hackney, will host a series of one-off Taco Tuesdays to kick start the summer. Joining Meriel at the pass will be a line-up of Club Mexicana’s friends from the London food scene, including vegetarian chef and best-selling Author Anna Jones, chef Neil Rankin of Temper, and organic sourdough pizza experts Radio Alice, all ready to put their own vegan spin on the traditional Mexican taco, whilst The Spread Eagle’s Sherri Lee Eastabrook will be shaking up the pub’s signature cocktails to wash things down. The humble sandwich | Bombay Bustle brings the Bombay sandwich during the British Sandwich Week

To celebrate British Sandwich Week, from 20th to 27th May, Bombay Bustle, the Indian restaurant in Mayfair from Samyukta Nair, will create a menu dedicated to the much-loved British institution: the humble sandwich. The menu will center on the classic Bombay sandwich, the famed street snack which is as much of a Mumbai staple as the stacked tiffin tins and hectic railway system that have inspired Bombay Bustle. From a modest three-ingredient sandwich to a towering grilled ‘toasty’ stuffed with cheese and chutney, every day thousands of Mumbaikers grab a piping hot sandwich straight from the chimta at one of the city’s many stalls. Cheese Tea | Very successful in China and invading the U.S.

Okay, you say cheese tea? You really mean cheese and tea in the same cup? Yes, tea topped with cheese! Spotted and originated in Guangzhou, the capital of China’s southern Guangdong province at HEYTEA tea house. The concept has spread from the street stalls of Taiwan to China, Singapore, Malaysia, Hong Kong, and even to New York’s Flushing neighborhood, where Happy Lemon serves the tea in four flavors, including chocolate.
