BUNK hotel Amsterdam |A new hotspot in the former Sint-Rita church
9-3-2020
After the booming success in Utrecht, Amsterdam now also gets a BUNK Hotel. BUNK opened its doors on the 5th of March in the former Sint-Rita church in Amsterdam North. After a thorough renovation, the monumental building has room for 300 guests. Is it a hotel with hostel prices? Or a hostel with the quality and service of a hotel? BUNK invites you to experience it yourself. BUNK has a sympathetically priced restaurant and a broad cultural programming. With the compact rooms and Pods, the lively shared spaces and the free cultural offer, BUNK focuses on connecting with the neighborhood and the world.
Last Tuesday, the 3rd of March, I was present at a dinner at the BUNK hotel. You are already impressed upon arrival by the transformation of this large church into a hotel. Great to see the BUNK pods but also the 107 compact rooms in the belly of the church, a separate concept. From April onwards you can and go sleep there, I believe this is a special and pleasant experience in Amsterdam. It’s also a great place to enjoy dinner with dishes based on various international cuisines, including that of Amsterdam. ^ Oscar van der Maas

Grounded Foods | Plant-based cheeses with no nuts, no soy, no dairy and no additives
26-2-2020
For many years the vegan cheese market merely consisted out of nut- and soy based products. Prices where high and the diversity was low as the market didn’t seem to progress, until now. Grounded Foods, founded by Veronica and Shaun Fil is offering a variety of cheeses, based on fermented cauliflower and hemp seeds. This way of making cheese keeps prices low and makes it possible for people with nut or soy allergies to also enjoy vegan cheese.
There is a choice between ‘Cauliflower and hemp camembert’, ‘Hemp seed feta’ and ‘Cauliflower Gruyere’ and the cheeses look delicious! We love to taste them.

Gacha Gacha Coffee | A do-it-yourself coffeeshop by Maruyama Coffee
21-2-2020
A do-it-yourself coffeeshop, created by Nendo Design Studio for Maruyama Coffee In Japan. Although already closed it’s been an introduction to a coffeeshop that didn’t require many staff members. Nendo Design Studio created the almost fully-automated café called Gacha Gacha Coffee. The experience was inspired by Gachapon, a capsule toy vending machines that’s popular in Japan. The pop-up from October till November 2019, located in the observation deck of Roppongi Hills, featured 12 vending machines. At these machines consumers could purchase a capsule filled with coffee beans for ¥500 (USD 4.50). As from that the consumer had to take the coffee to semi-automated stations to brew it themselves. Staff only had to give information and clean up!
The idea behind Gacha Gacha Coffee is to create a coffee experience that makes you choose your beans, take time to watch it brewed and maybe even talk about coffee with a barista and of course enjoy the view at the observation deck! But as Trendwatching (we spotted Gacha Gacha Coffee in their ‘Innovation of the day’-trendletter) indicates it’s a great example on how you can use automation to face labour shortage, which we’re facing in the Netherlands as well.
Dominique Ansel Treehouse |A new all-day café in London
18-2-2020
Chef Dominique Ansel, named World’s Best Pastry Chef by the World’s 50 Best Awards, has recently opened Dominique Ansel Treehouse, a new all-day café in London’s Covent Garden. Located on quaint Floral Street, the new concept offers a menu that celebrates and showcases the pastry foundations and artisanal techniques that pastry chefs do best, from flaky puff pastry to delicate handmade pasta, short crusts for pies and tarts, fresh-baked breads, and more.
We’ve been fans of chef Dominique Ansel from the moment he opened his first bakery in New York and got famous by creating his Cronut® and many more fêted pastries like my favourite his signature DKA (Dominique’s Kouign Amann). They don’t serve the Cronut® at the Treehouse for this croissant- doughnut hybrid you need to go to his bakery in London. But the menu of Dominique Ansel Treehouse sound delicious and London is relatively nearby for us Dutchies, although we still would love to have a Dominique Ansel bakery in Amsterdam! ^Marjolein

We wrote about the ‘Global Office of Healthy Tourism’ by Airbnb back in 2018 and recently they published a whitepaper on New Sustainable Tourism Destinations in which they, amongst other topics about sustainable tourism, subscribe the project with the city of Igualada in the Anoia region in Spain. The effect of the project: Guests arrivals in the Anoia region grew by almost 50% in 2019, 71% growth of domestic travel in the Anoia region in 2019, 16 of the 35 municipalities in the Anoia region received travelers through Airbnb.

Mirabeau Rosé Gin | Perfect to make pale pink cocktails
17-1-2020
Mirabeau Rosé Gin, a sophisticated dry gin with a category redefining spirit, created by Alex Ignatieff, the gin brand director of Domaine Mirabeau in France. The Rosé Gin is made with the scented grape alcohol extracted during the dealcoholisation process when making the lower alcohol and vegan rosé of Mirabeau, Forever Summer. Together with the chosen botanicals, this small batch gin stands out in the growing pink gin category. Mirabeau Rosé Gin is a true gin with juniper being a dominant component. The delicate signature flavours come from traditional distillation with no need for sugary additions.
Like all the light pink rosés and sparkling rosé from Domaine Mirabeau, the gin looks beautiful and might be an asset for cocktails like Mirabeau Rosé Gin Fizz Recipe or a festive Punch cocktail recipe, in the article you will find a video about how to make the latter! The Domaine Mirabeau also sells 5 distinctive rosés, rosé with low alcohol and vegan (Mirabeau Forever Summer Rosé) and prêt-à-porter cans of rosé to go!
KINGSTAIRS | Burger King gave away free Whoppers in the Bronx
17-1-2020
To celebrate the DVD release of the movie Joker, Burger King gave away free Whoppers delivered to residents of the Bronx in New York City. This because they have been suffering through tourists from all over the world climbing the ‘Joker stairs’ on Shakespeare Avenue! Burger King said anyone living in the same borough as the now-famous stairs could get a free Whopper delivered by Uber Eats until January 12 if they used the code KINGSTAIRS.
Another example of a viral marketing campaign to promote a local happening. So if your city has its own special circumstances….. like a famous Instagram spot, use it to promote your product through social media. And we all know that residents in cities like Amsterdam, Barcelona, Paris etc. ‘suffer’ due to the influx of tourism. Play with it!

The BrewDog AF Bar, the alcohol free beer bar & BrewDog’ ‘Drink All You Can Jan’
9-1-2020
‘The BrewDog AF Bar’ is the brewery’s first fully alcohol-free bar. Independent Scottish craft brewer BrewDog have opened their first bar dedicated to alcohol-free. The BrewDog AF Bar is the world’s first alcohol free beer bar and will offer 15 taps of draft alcohol-free craft beer. The bar has opened in central London and will be the first of the company’s global bars to feature a line-up solely devoted to drinks without alcohol. In addition to this, BrewDog will be running ‘Drink All You Can Jan’ across all bars. The initiative offers drinkers unlimited refills of BrewDog alcohol-free beers in all bars for the entire month. And with 24% of beer drinkers choosing more low or no-alcohol options (according to the Mintel, UK Beer Market Report 2018), the brewery are piloting a new concept for their bar division, with a view to rolling it out across the UK and into Europe.
It’s the time for alcohol free drinks: in the Netherlands we spotted amongst others the first pop-up Bar 0.020 in Amsterdam and the new menu for alcohol free drinks at NRC café in Rotterdam. With Dry January it’s wise to serve your guests at least the possibility to drink alcohol free. Our colleagues Robin, Nick and Leonie tried some drinks last week and they were kind of surprised on the sweetness of most mocktails! So if you’re buying or creating alcohol free drinks, not everybody has a sweet tooth!

Alternative to the breakfast buffet
3-12-2019
A blog by Marjolein van Spronsen about sustainable breakfasts in hotels. She no longer believes in large buffets and recently came across a nice solution.
For years I have been surprised by the lavish breakfast buffets in hotels, with cooking islands where your eggs, pancakes, waffles, French toast and so on, are prepared freshly. International hotels prepare the most incredible dishes for their guests, smoked salmon is almost always available and sometimes even oysters. More than enough choices for everyone! Now however, I have reached an age where I tend to eat less, and if I look at what others get stuffed on their plates, I am always surprised! I sometimes even have the urge to point out to my fellow buffet users that the pancakes with maple leaf syrup don’t have to be on the same plate with their salmon.
