Picnic Works, a Seattle-based developer of kitchen automation technology, recently announced a partnership with ContekPro, a Portland-based manufacturer of modular kitchens. The partnership fuses the strengths of both companies to create factory-built pizza kitchens for commercial foodservice providers. The joint offering, the modular automated pizza kitchen, is faster to deploy, hassle-free to launch, more cost-efficient than brick and mortar, and has less impact on the environment, while increasing profitability for owners.

If you are, like me, in your sixties you might remember camping and picking up fries or other dishes by taking your own pan to the camping restaurant. Sounds like a pretty sustainable start, but the convenience-economy changed this a lot! If you like to order take-away, you usually end up with piles of takeout boxes to dispose of. We read about CLUBZERØ in an article about the owner Safia Qureshi that is a finalist in the 2022 Food & Drink Heroes Awards – Sustainability Entrepreneur of the Year. Although I have trouble picturing all consumers using this returnable packaging system, it looks promising in the catering and B2B space. Why not try it in the Netherlands as well! ^Marjolein

Created by Downtown Hospitality Group (DHG), the restaurant serves up elevated, over-the-top fare for breakfast, lunch, dinner, and late-night, including gourmet bacon flights; sweet and savory French toast boxes; and Reverse BLTs, for which weaved bacon takes the place of bread.

Children’s mayor opens treasure hunt ‘Max en de Gouden Strooplepel’

The honor went to the brand-new children’s mayor of the Dutch city of Aalten Timon Grevink to open the new treasure hunt ‘Max en de Gouden Strooplepel’ (Max and the golden syrup spoon) of restaurant ‘t Noorden van Aalten. On Tuesday, 26 October, he got the first copy of the book and was the first to search for the golden syrup spoon in the playground. The story reveals that the spoon is crucial for making ‘De Noordelingen’ syrup, essential for pancakes.

Puttshack opened its first location in London in 2018. There are now four locations in the UK and two in the USA, in Atlanta and Chicago, with ambitious plans for expansion there. As of yesterday you are able to buy the ‘starbox by Sjieke Snacks’. Here in the Netherlands we love our fried snacks, we call them our ‘brown fruit’ and love to eat them with a beer. The culinary snacks from Sjieke Snacks are special, created by chefs with Michelin stars. For the first edition, owner Marijn van Doorn, invited five Michelin-starred chefs from the Den Bosch area to share their culinary snacks. Resulting in a box with the ‘Driel mushroom croquette’, ‘Risolle Wagyu and tomasu’, the ‘Thom Kha Kai Kroket’, the ‘Balleke Vigor with foie’, ‘Chicken Corn Thai curry and shrimp’ and Marijn van Doorn’s own ‘Cheese Pata Souffle’. More space for restaurant Elea by moving to The Hague

Relocation – Restaurant Elea is moving from Rijswijk to the Noordeinde in The Hague. The restaurant of hostess Bibi Kuyp and chef Takis Panagakis will close its doors in Rijswijk around the end of December 2022, to reopen them on the Noordeinde in the Hofstad early 2023. With more space for the kitchen and the ability to host more guests!

The Japanese borders may have opened up on October 11, but thanks to restaurant SHIN you can enjoy Japanese cuisine right here in Rotterdam, the Netherlands. At SHIN, owners Tony and Nanako share all their favourite dishes (like the affordable wagyu) and drinks, prepared by a certified chef from Japan, with the public. In July this year, SHIN, a Japanese tapas bar and matcha café in izakaya style, opened its doors on the Rodezand in Rotterdam Center. This brand new concept is created by entrepreneurs Tony and Nanako, who also own the popular Japanese ramen restaurant Ajisan on the Coolsingel.
World first innovative cabin against stress and sleep problems by AYAVAYA at BLUE Wellness resort Leiden

The collaboration between the two parties has led to a prototype of this unique cabin with automatic therapies, with the intention of a long-term partnership to make a wellness experience even more complete. The AYAVAYA cabin against stress and sleep problems can be experienced exclusively at the BLUE Wellness resort Leiden until December 2022.

Interesting initiative in London where Head Room Café brings awareness and access to mental health support. And ghost kitchen chain Casper from Belgium recently also launched in the Dutch cities The Hague and Rotterdam.
Last week, the hotels Moxy the Hague and Residence Inn by Marriott the Hague were officially opened, located in the Muzentoren in the city center. And chef Bart De Pooter opened his plant-based restaurant WILDn at the Sapphire House Antwerp.
The last week of September New York enjoyed ‘La vie en rose’ by Maison Valentino, a great example of going ‘Pink all the way’. And OneThird developed a scanner to determine the ripeness of avocados and received a voucher from the Foundation Together Against Food Waste to test this on the shop floor.
A ‘koopstoot’ from Brewery ‘t IJ

A thousand bottles, a lot of beer, one genever. On 13 October, Brewery ‘t IJ in Amsterdam will launch its first own limited edition spirit. The kopstoot or in English heatbutt is a glass of beer with a genever and a typical Amsterdam invention. As an Amsterdam brewer, the choice to make genever (Dutch gin) alongside beer is therefore a logical one. Brewery ‘t IJ decided to distil beer and process it into genever, whose characteristic flavour is due to additions of celery and caraway seeds. A drink according to the standards of ‘t IJ: pure and smooth, with a soft spiciness that combines well with the beers of Brewery ‘t IJ.
