Ciel Bleu IPA made by Brouwerij ‘t IJ

Three years ago, two-star restaurant Ciel Bleu launched its first IPA (India Pale Ale) in collaboration with the renowned Amsterdam brewery ‘Brouwerij ‘t IJ’. While the intention was a single collaboration, guests kept asking for a new beer.

The chefs Onno Kokmeijer and Arjan Speelman thus faced the challenge to brew a new gastronomical beer that would taste even better than the first IPA. After many sessions and trying all kinds of ingredients, they chose kaffir lime as the main element of the Ciel Bleu IPA 2.0 beer. This citrus fruit is also known as Djeroek Poeroet and is widely used in the Asian cuisine. The dry-hop with Waimea and Citra hops gives the beer a flowery, freshly bitter character.

Brouwerij ‘t IJ

The brewery of Brouwerij ‘t IJ has two locations, one in East Amsterdam, next to the Gooyer windmill. This is also where the brewery began and where the pub is located. The second brewery is located on the Zeeburgerpad. The pub is opened every day from 2 pm to 8 pm. All the beers are brewed in the traditional manner, without filtering or pasteurization.

Ideal food pairing and serving

In restaurant Ciel Bleu the beer is served in a wine glass at a temperature of 10 to 12 degrees Celcuis. Dishes with mostly fresh elements best match the Ciel Bleu IPA, such as citrus combined with sweet elements. Like any IPA beer, it tastes best within a couple of months after production. The beer is available at the Ciel Bleu restaurant and several specialty beer shops. Of course the beer is also available at ‘Brouwerij ‘t IJ’ itself, which is worth a visit as well!

Last weekend we’ve tasted two new hamburgers from The Frozen Butcher, the Iberico Burger and the Angus certified Burger. We really loved their taste! On their website we learned that The Frozen Butcher has a whole range of burgers aside from the Iberico and Angus burgers; a Wagyu burger, a US beef burger, a lamb burger and an organic burger.

Frozen in time… Fresh on your plate

The burgers are immediately frozen after production by using special freezers to guarantee the true butcher’s quality. This technology enables them to produce without artificial preservatives, colouring agents or other additives.

SIAL Innovation Award 2014

At SIAL Innovation 2014 the Frozen Butcher won the award in the category Meat Products. The jury, made up of independent experts, selected the concept as winner because of the premium meat quality, the clean design of the packaging and the valorization of the country of origin.

Serve your guest a burger to their liking

First of all, when talking about trends you need to realize that many different concepts are being named trends these days. However, there is a big difference between trends, hypes and inspiration. For example, we call our website hospitalitytrends.eu but mostly offer inspiration based on red threads in international trends. Real trends take their time in the adoption curve. If you look at the adoption curve of for example sustainability, you’ll see that it has been coming up for 15 to 20 years already and now it is mainstream, thus this is a trend. Hypes however usually stick around with the innovators and early adopters.

The usual development of a trend is that it begins with a very small portion of the population. Logically entrepreneurs are drawn to new trends since they are always looking for new success. They are constantly scared to miss out and fail in their business endeavours, yet specifically as an entrepreneur it is important that you keep on living your own dream and take care that you do not jump on every trend or hype that comes along.

Across the City of Sydney, several food trucks are operating as part of the Sydney Food Trucks Project. The trucks offer diverse dining options such as kingfish ceviche, veggie burgers and organic gourmet pizzas what can be washed down with non-alcoholic sangria and fresh juices. In 2011, people in Sydney were asked what they wanted to see happening in Sydney during the ‘after hours’. The overwhelming response was to have more food options and from there the Food Truck Project was born. The food trucks are operating at different locations around the city, which can be followed with the Sydney Food Truck app. The project is a one-year trial for now.
