An article about one of our Dutch prides, our ‘kroketten en bitterballen’ (croquettes and small croquettes). Royal Spelt created the first croquettes made of 100% organic spelt. Prepared with fresh herbs, vegetables and the best organic beef.

Royal Spelt makes croquettes made of 100% organic spelt

Royal Spelt wants to make the tastiest and best snacks in the Netherlands, made of 100% natural and organic ingredients and 100% spelt. Their slogan ‘Pure nature in a jacket of spelt’. Royal Spelt has chosen for the Eko-grain spelt, consisting of a mixture of vitamins, minerals, carbohydrates and fats. The Eko-grain spelt also has a high protein percentage and is rich in amino acids. In addition is the filling made of biological meat without artificial colors, flavors or fragrance and the salpicon is made with spelt flour.

Healthier snack

Okay, the croquette will still be fried, but for the group of people who consciously checks the ingredients of the products they eat, the croquette is a healthier alternative. The demand for organic and spelt products increases and as ‘organic snacks’, these croquettes are an addition for caterers, restaurants and snack bars.

Royal Spelt delivers their products to companies with a conscious mind for healthy but tasty food. The aim is to make the best and most responsible croquette of the Netherlands and develop more flavours.

Why don’t we have a Cheese Bar in the Netherlands?

Why don’t we have a cheese bar in the Netherlands? The Poncelet Cheese Bar, with locations in Madrid and Barcelona, is a great example. The restaurant serves great dishes with all kind of cheeses.

Located in the Hotel Meliá Sarriá, the Cheese Bar has a total of 400 square meters on the ground floor of the hotel. And like in Madrid it is a great meeting point for cheese lovers to enjoy a high gastronomic level. In the library you can scroll through some great books about cheese. Design atelier Estudi{H}ac created a unique interior using a lot of wood, marble, copper, green elements like a fabulous vertical garden and colorful wooden sticks at the ceiling. The 400 square meter is filled with a cocktail bar, the main cheese bar, a library, a community table and a big cheese pantry, filled with great cheeses. On the menu of Poncelet

We’ve visited the Cheese Bar with a company of six, giving us the possibility to try a couple of starters, like the croquettes made with cow cheese Valtellina, matured goat cheese or sheep cheese blue cheese Arribes. The coca Q & Q (Quatro Quesos), the manchego bonbons and the coolant potato and mimolette cheese tasted delicious as well. The wild mushroom risotto with Sbrinz cheese and the false gnocchi’s with Zamorano cheese and the Prey Iberian meatloaf where our favorites amongst the main dishes. The Cheese Bar also serves fondues and raclettes. You can even have dinner at the Cheese Bar with people who don’t fancy cheese, a couple of dishes have the – no cheese for me – sign. The prices range from 13 to 23 euro per dish.

Why don’t we have a Dutch Cheese Bar?

We think that a cheese bar could be a popular spot in touristic areas in the Netherlands as well. Amongst others you could serve cheese ‘kroketten’ (croquettes), our tosti’s (melted cheese sandwich) and Dutch cheese on our healthy ‘boterham’ (bread) during lunch time. We’re sure that a great chef will be able to create dishes at the same gastronomic level while using our Dutch Cheeses.

Valuas croquette at the Limburg Museum

The standard & gluten free Valuas croquettes by chef Eric Swaghoven of restaurant Valuas (1 Michelin star) in Venlo is going to be served in the café the Limburgs Museum. They start serving the Dutch specialty (croquette) from the official start of the exhibition “War & Freedom”, along with other culinary snack creations by Eric.

Core values of his culinary snacks

Chef Eric Swaghoven has created his luxury and artisan snacks by the motto; tasteful and conscious snacking. Core values of its croquettes and ‘bitterballen’ (bal size croquettes) are quality, taste and sustainability. The Valuas croquette is the starting point of his line of snacks.

The Limburgs Museum is a family museum and the daily practice at the Museum shows that the visiting youth still prefers to snack during their visit. With that fact in mind, the choice to put the ‘kroketten & bitterballen’ by Valuas on the menu, is a choice for quality snacks.

The Valuas croquette is made with pure beef and a French roux sauce in proportion 35% meat, 45% roux to obtain a 110 grams of croquette. Tasty, full-bodied and creamy because of the broth used for this receipt. They also have a gluten-free version.

Other culinary snacks

In addition to the iconic Valuas croquette, a veal croquette, shrimp croquette, vegetarian croquette and a mushroom croquette will be served in the Museum. Also on the menu: fried king prawns in shrimp crackers crumbs.

The ‘chicken soup’ croquette by grandma Jo Swaghoven-Eupen

The ‘chicken soup’croquette is a tribute to Grandma Jo Swaghoven-Eupen, who did manage café Modern in Venray with her husband, in the years after the war. The chicken soup grandma Jo made has become legendary. The family recipe inspired her grandson Eric to make his ‘chicken soup’ croquettes.

NEXTDELI is a new player in the field of food concepts and introduced new products: The Bacon Bullets and The Bacon Balls. The products are inspired on the Dutch well-known ‘Kroket’ and ‘Bitterbal’ and have a bacon flavour. The Bacon Balls and Bullets distinguish themselves from the ‘Kroket’ and ‘Bitterbal’ in three ways: ‘The Crunch’, ‘The Bacon’ and ‘The Taste’. The products have a special crunch because of the use of American breadcrumb. The Bacon can be tasted in the creamy filling and the Taste refers to the spicy aftertaste. The products are made of organic bacon and no additives and preservatives are added. A special sauce is developed to replace the mustard that is usually used with ‘kroketten’ and ‘bitterballen’. The Gunshot sauce looks a lot like a mustard-sauce, but has a sweet touch from honey and a touch of BBQ.

Crispy snacks without the deep fryer

Until recently it wasn’t possible to make a snack from the oven as crispy and delicious as if it is from the deep fryer. Snack manufacturer Royaan introduced a complete new assortment crispy oven snacks under the Kwekkeboom brand. The assortment will consist of ‘kroketten’, ‘bitterballen’ and chicken- and cheese-snacks, all provided with a unique patented crispy-crust technology.
Besides that the snacks are more healthy out of the oven, there is also an advantage for companies as airlines, gas stations and movie theaters. For these parties, it isn’t always possible to offer crispy snacks because they are not allowed to fry, or because they don’t have frying facilities. Several Dutch companies as Corendon already sell the new snacks, but consumers have to be a bit patient; the Kwekkeboom Oven Snacks will be launched in retail stores later this year.
