Brasserie G&F | Name reference to predecessor Daalder
The special location of neo-brasserie G&F has a rich hospitality history going back as far as the 1930s. What once began as a typical pub in the Jordaan has gradually developed from jazz pub to eatery and eventually to the fine dining restaurant Daalder*. The name “Gossler & Florin”, both historical coins, respectfully refers to its predecessor Daalder.
Brasserie G&F, a modern brasserie that refers back to the past. The chefs take inspiration from the traditional French brasserie, but, through modern cooking techniques and an innovative, creative style of cooking, the dishes are elevated to the next level. The Onglet Béarnaise, with a glaze of black garlic, a crunch of colombo herbs, kidney béarnaise, tarragon and sweet and sour shallot with boeuf bourguignon on the side, is a good example of where the best of the past and the present come together.
Fine dining at Brasserie G&F
Owner Wesley van Haeften is a connoisseur of Belgian origin. “For a number of years, I missed a restaurant in Amsterdam where I could enjoy authentic Burgundian cuisine on a high level. With Gossler & Florin, we have a place where you can dine all evening but also just sit at the bar in the evening for a really good glass of wine or a cocktail.”
Since early September, the brasserie has been serving a range of international classics, each with a modern twist. In addition, the wines have an equally important role at Gossler & Florin as the dishes do. Besides the extensive wine list, guests can also inquire about Wesley’s ‘cellar book’, in which he shares his cherished personal gems.
Chefs bar
The warm and cosy ambiance invites guests to enjoy more than just culinary delights. Those who want to watch the chefs can take a seat at the chefs bar, where a selection of classic cocktails are served alongside the dishes. Well-known cocktails such as the Negroni or the Bellini can be found on the menu, but even these evergreens among cocktails have one rule: classic but with a modern twist.
