‘Kosher-style’ dinner | Sidney Schutte creates dinner with Itzik Barak

From Tuesday the 24th to Thursday, January 26th, 2017 chef executive Sidney Schutte of Waldorf Astoria Amsterdam will be cooking dinner in his kitchen on the Herengracht with his Israeli colleague Itzik Barak of Waldorf Astoria Jerusalem. The chefs will compose a six-course menu based on modern, gourmet, Israeli cuisine, of which Itzik Barak is one of the main exponents. This special ‘kosher-style’ dinner will be served in Brasserie Goldfinch.

Culinary jam session at the highest level

Sidney Schutte and Itzik Barak met a year ago at the ‘Taste of Waldorf Astoria’ event in New York, where both were among the five selected chefs Waldorf Astoria worldwide. “We hit it off right away,” explains Sidney Schutte the collaboration. “Occasionally you meet colleagues that trigger your interest, you want to take a look in their kitchen and in this case it was mutual.” The chefs find each other in the innovative and creative way they both interact with taste and flavour combinations, the use of (new) cooking techniques and their unconditional commitment. “It will be a culinary jam session at the highest level,” promises Sidney Schutte. Guest Chef Itzik Barak and host Sidney Schutte will each take three dishes on their behalf. From the 12th till the 16th of February 2017, the roles are reversed and will Sidney Schutte be guest in the kitchen from Itzik Barak at Waldorf Astoria Jerusalem.

‘Kosher-style’ dinner by the influences of Itzik Mizrachi Barak

Itzik Mizrachi Barak is a highly respected chef in Israel. He grew up with the aromas and flavours of Jerusalem and helped his mother and grandmother since his childhood in preparing traditional meals; ‘soul food’, as he calls it. The culinary ‘melting pot’ of the Middle East is the inspiration for his later career, which began at the Hilton Jerusalem. Itzik Barak later worked as chef and F&B manager at several leading hotel chains in Israel and gained international experience in prestigious restaurants in Japan, Hong Kong and the United States. In 2015 he was appointed as chief executive of Waldorf Astoria Jerusalem’s Palace and King’s Court Restaurants. Itzik Barak creatively uses the pure and fresh seasonal ingredients and products in a combination of the Japanese and French cuisine, with their specific and sophisticated tastes.

Inspiration

As already indicated in the press release, the idea for the collaboration was created during the ‘Taste of The Waldorf Astoria’. During this event the current group of chefs from all Waldorf Astoria Hotels worldwide in collaboration with the James Beard Foundation, tried to create a new iconic dish. Like the famous dishes as Eggs Benedict, Red Velvet Cake and the Waldorf Salad that are the culinary history of these hotels. The last edition was won by Chef Benoit Chargy of the Waldorf Astoria Beijing along with the rising star chef and finalist by the James Beard Foundation, Erik Bruner-Yang; the Jing Roll.
