Joris Bijdendijk opens Wils Bakery Café | Amsterdam
Joris Bijdendijk is opening a new business on Amsterdam’s Stadionplein. The restaurant, which will be called Wils Bakery Café, will be a combination of a bakery and a bistro. With this concept, the chef wants to establish a culinary sister of star restaurant Wils, which is located on the third floor of the building.

Inspiration for Wils Bakery Café
“The team at Wils is bursting with knowledge and we wanted to do more with that. During the lockdown, we started experimenting with selling bread and pastries and that became a big success. That was an eye-opener for us,” says Bijdendijk. “We went straight to the drawing board and together came up with a bakery café, a place where the craft of a bakery and the conviviality of a French bistro come together.”
While restaurant Wils* and Wils Bakery Café differ in many ways, the 37-year-old chef also sees similarities: “Both businesses exude the craftsmanship that we have in our team, that’s really the common denominator. In the restaurant you experience this in a more exclusive atmosphere during an extensive lunch or dinner, while you walk into the bakery café without a reservation and plop down for a sandwich from our baker Max with a glass of wine from sommelier Barbora. Or, depending on the time of day, for a cup of coffee with pastries from our pastry chef Tania.”
Opening hours and menu | Wils Bakery Café
The new establishment will initially be open from noon on Wednesdays through Saturdays for lunch, drinks, and dinner. The menu will feature classic lunch and bread dishes such as the Reuben Sandwich, an asparagus quiche and pâté en croute. In addition, Bijdendijk and team serve their best versions of a schnitzel, lettuce fin and soft serve ice cream. Bread, pastries and lunch-to-go can also be purchased at the bakery itself.
The opening of Wils Bakery Café is scheduled for Wednesday, February 2, 2022. Reservations are already possible through the website.
About Wils Restaurant
Wils, the fine dining restaurant above Wils Bakery Cafe, opened its doors in October 2019 on the rooftop of Move Amsterdam, next to the Olympic Stadium. The eye-catcher of the establishment is the open fire pit, where the entire team cooks in. In March 2021, the restaurant was awarded a Michelin star.
