IJsvogel is the first real brewer’s grain ice cream in the Netherlands
IJsvogel (Kingfisher bird) is a new and unique vegan waste-free ice cream. This collab from ice cream makers IJsbaart and beer brewery Bird Brewery uses brewer’s grain, a residual product from the brewing process. Then, through a unique process, the brewer’s grain is turned into milk. This forms the basis for the ice cream mix. The basis is finally flavored with a Russian Imperial Stout beer, chocolate and coconut. The brewer’s grain ice cream will be launched on May 13, 14 and 15 during Festivalk at House of Bird in the Diemerbos near Amsterdam.

IJsvogel is the first real brewer’s grain ice cream in the Netherlands
“We made the ice cream from a residual product; brewer’s grain. Brewer’s grain is a leftover of brewing beer. This leftover grain is first processed into vegan milk, after which it is the basis of the ice cream mix,” explains creator Lena Wabeke. It is – as far as known to Bird Brewery and IJsbaart – the first ice cream in the Netherlands that is produced in this way.
The idea
The idea for this leftover ice cream was born during Lena Wabeke’s internship. For her Food Innovation course, she started investigating what she could do with the brewer’s grain – a residual product from brewing – from Bird Brewery. “Several ideas were worked out and tested, but in the end we all were most enthusiastic about the option of making milk from the brewer’s grain,” says Bird Brewery co-founder Ralph van Bemmel. This milk is the basis for the ice cream. Together with the ice cream makers of IJsbaart – known for their vegan ice cream – the vegan brewer’s grain ice cream IJsvogel then went into production.

The IJsvogel ice cream is a collab between brewery Bird Brewery and the ice cream makers of IJsbaart. Both young companies are known for their artisanal products, pure ingredients and sustainable vision. They are rapidly conquering the beer and ice cream market: their products can be found in many places in the hospitality industry and retail. The brewer’s grain ice cream is a wonderful way to combine the expertise of both into a new, innovative product.
