YouTube has been a source of inspiration for spotting trends the past few years. Every day, thousands of movies are uploaded with new and interesting content. We too sometimes use videos as a source of inspiration to write about. With this week again a selection of videos that Mike Adam thinks they are cool to see. Amongst them a video with the menu of the future, a video with a couple of Christmas dessert to impress and about a high tea of jewelry at the Waldorf Astoria in Amsterdam.
The menu of the future
Trying to distinguish yourself through technology is nothing new in the restaurant industry. Often, however, it immediately becomes the center of a concept and is a big investment required. HoloLamp however, has brought a portable projector onto the market with which they project the different dishes on the menu as holograms on the table. The projection can’t yet be compared with the quality of actual photo material, but the technique is very promising. For me it is especially interesting because it is so easy to apply and still gives an extra experience to a restaurant visit.

Christmas is just a few weeks away. I am looking forward to this period for a long time and I assume many with me! Especially since cooking for family and friends is something I love to do. Despite all the fun, I feel some pressure to find the right dishes around this time! After all, you want to impress your loved ones during dinner, especially as a chef and real foodie. Personally, this means that I always include a number of surprising techniques into my menu and presentation.
This year I choose to create a Christmas version of the famous Dutch dessert “Het klokhuis” of restaurant Bord’eau. In the video below, from 6:39 to 7:35, you can see how you can make this dessert. The result will be an edible Christmas sphere with a snowman in it. Some colleagues also like the Christmas tree dessert at the beginning of the video!

High tea of juwelry
To celebrate the 10th anniversary of Choices by DL Jewels, Waldorf Astoria in Amsterdam organized an afternoon tea. A striking detail is that all the small dishes are based on the appearance of the stones from the jewelery line. In the video, executive sous-chef at the Waldorf Astoria, Thomas Bron, shows how they create the sweet jewelry and how they are presented. The video clearly shows what a good pastry chef is capable of doing! Difficult to match but it might be inspiration for the friandises after your Christmas dinner!
