The cauliflower as substitute for chicken
Early November I received an app from my daughter from New York with the question if I had already written about the trend ‘cauliflower as substitute for chicken’. Seems to be popular in New York and you have to think of cauliflower prepared as buffalo wings or dishes like ‘General Tsao cauliflower’ instead of chicken. Since then I came across a couple of examples, time to start being creative with cauliflower as substitute for chicken!
The cauliflower as main dish
It’s about very typical American dishes where the chicken is replaced by cauliflower. For example, they serve cauliflower Buffalo in the Clinton Hall and the Oscar Wilde Bar in New York. In L’Atelier in Quebec City they make Cauliflower General Tao which is a typical North American ‘Chinese’ dish that is normally served with chicken.
If you type ‘cauliflower instead of chicken’ on Google, you will see all kinds of recipes. Including a recipe for ‘Baked Buffalo Cauliflower Wings’ on the Gimme Delicious website. But also Asian recipes with cauliflower such as’ Spicy Fried Cauliflower ‘or’ Sticky Sesame Cauliflower’ and ‘Cauliflower Manchurian. Even in the Netherlands we have seen the cauliflower steak, or as piccata with a lemon caper sauce or cauliflower as a healthy pizza base, but substituting the chicken with it, is new to me!
Time to experiment with cauliflower and pamper your vegetarian or vegan guests with something other than the standard goat salad and omelet. ^ Marjolein
