Coffee Pixels is a food-tech startup from Riga, Latvia. They’re reinventing the coffee experience by turning specialty coffee into a mobile, ready to eat coffee bar with superfood qualities. Coffee Pixels uses the entire coffee cherry – the coffee bean and the antioxidant-rich fruit, which is combined with good fats (cocoa butter) to better absorb the antioxidants, as well as deliver a slower caffeine release, leading to a more sustainable energy boost.

Early November I received an app from my daughter from New York with the question if I had already written about the trend ‘cauliflower as substitute for chicken’. Seems to be popular in New York and you have to think of cauliflower prepared as buffalo wings or dishes like ‘General Tsao cauliflower’ instead of chicken. Since then I came across a couple of examples, time to start being creative with cauliflower as substitute for chicken!

Fazer Cricket Bread | Finnish bakery launches ‘crunchy’ insect bread

Since the 24th of November you can buy cricket bread in Finland. One of Finland’s largest food companies, Fazer is selling this crunchy cricket bread. According to Markus Hellstrom, head of the Fazer group’s bakery division, one loaf of bread contains about 70 dried crickets. The crickets are grounded into powder and added to the flour.
Rebottled | From wine bottle to drinking glass

At Rebottled they believe that upcycling is the new recycling. They extend the lifespan of wine bottles by making drinking glasses at a workplace of the Salvation Army in Utrecht, The Netherlands. In addition, they employ people who do have difficulties trying to get a job, which improves the social environment of these people. With their idea they won the PwC Social Impact Lab and public award in October. They have also been nominated for the Horecava Innovation Award 2018.
Le Compostier | A worm hotel for restaurants

One of the first worm hotels of Le Compostier was recently placed at Restaurant As in Amsterdam. In the worm hotel, chefs can compost vegetables and fruit at their own location and use the compost directly in their own garden. This way kitchens from restaurants become circular.
Hotel Jakarta Amsterdam | Greenest hotel in the Netherlands

The greenest hotel in the Netherlands is currently being built in Amsterdam and is expected to open its doors in 2018. The innovative hotel is called Hotel Jakarta Amsterdam and is part of the WestCord Hotels group. The hotel will be built on the exact same spot where the passenger liner between Amsterdam and Jakarta used to depart from.
