Self-sustaining restaurant de Dyck, located in Woubrugge, has been awarded a Green Michelin Star during the annual Michelin star awards ceremony at the DeLaMar theatre in Amsterdam. Since its opening in 2012, restaurant de Dyck has always chosen the most appropriate way, using common sense, Dutch pragmatism, and a healthy dose of stubbornness.

We already have 17 restaurants with green stars in the Netherlands and this year Hof aan Zee and restaurant Morille (both located in Kouderkerke), restaurant Rotonde (Rotterdam) and the above mentioned restaurant de Dyck received their green star. Congratulations to everyone, especially also to those who kept their green star. Keep reading to find out more about the background and green details of restaurant de Dyck.

A real Dutch initiative! An extremely fruitful season has led to an abundance of 64,000 bottles of wine at the nuns of the Sint Catharinadal monastery in Oosterhout (small city in the south of the Netherlands). To market this Sint Catharinadal wine, the nuns have enlisted the help of an old friend: Thibaud van der Steen of Breda’s No Waste Army.

Great idea to see if you can serve this local wine in your restaurant or bar in the area of Breda – Oosterhout?

For over 10 years, FrietHoes has been preaching the fresh fries revolution: honest and delicious fries without processing, additives or other frills, but with skin. FrietHoes fries are now on the menu nationwide in numerous restaurants, the better chip shops and are also widely present with food trucks at festivals. From now on, FrietHoes will literally ‘dish out’ a new way for serving fries with the presentation of its very own dish. This enamel serving dish, which shows FrietHoes at its best, features a series of specially made illustrations by Haarlem cartoonist Joost Swarte. The illustrations tell the story from potato to fries in an original way. The launch of the dish is the continuation of a year-long collaboration between Joost Swarte and FrietHoes.

At horecatrends.com we spot many national and international trends on a daily basis. We pick the most interesting ones to write about, the other trends we use in our weekly column ‘Trends we spotted this week’.

With this week links to articles about among others, a pop-up of innovative cocktail hub Licorería Limantour at Fandi Mata in Williamsburg, Brooklyn.

Spotted in many Instagram posts, caviar on baked potatoes, served in for example the piano bar The Nines and Caviar Kaspia in The Mark Hotel. Are we going to serve that in Europe as well?

And more inspiration from Instagram: Mr. Black Cold Brew Coffee Liqueur has created a Parmesan Espresso Martini. And Taste Film in London, a new way to watch what you eat.

We’ve been presenting tea in rectangular or square tea boxes for years but now there’s the T-Box.

Hendrick’s FLORA ADORA is available since March 1 and is a limited edition floral spring bouquet gin for colorful cocktails. With the recipe of the Wildgarden Cup.
