This week Brewery Oedipus starts with brewing a craft beer that will be aged in Jameson whiskey barrels. Hoppy and tangy Saison with smooth influences of Irish whiskey. The beer will be available in a limited edition as from April 2016.
For centuries beer and whiskey can be found on the bar alongside, but never before have the flavours been so intertwined as with the collaboration between the brewery Oedipus from Amsterdam and world famous Irish whiskey brand Jameson. On 11 February Bram Ladage is opening ‘Bram’s, Gourmet Frites.’ At this new, international formula fries are prepared on a high culinary level and will be sold from a remarkable, black shipping container. The pilot store is going to be at the ‘Kop van Zuid’ in Rotterdam.
This new, international formula is going to be a worldwide standard for quality fries, says Bram Ladage partner Rocco Ladage. They are starting in Rotterdam but there is more and more demand from abroad. At the new concept ‘Bram’s, Gourmet Frites’ it’s about traditional preparation. The real Dutch potatoes from the Hoeksche Waard are cut into thick fries and prepared right in front of the costumers. Because these fries are so thick they absorb less fat and they also use oil with ‘good’ fats.
Together with Herman den Blijker, Bram Ladage developed five new stews: Pulled pork BBQ, Captain’s beef, Asian chicken stew, the vegetarian Truffle mushroom and Pumpkin veal stew. With these stews, fries will no longer be a ‘side dish’ but a full meal component.
Bram Ladage is a family company that’s originally from Rotterdam. But apart from Rotterdam they are getting more well known in Europe as well. Besides the formula Bram Ladage itself they also exploit BroodExpress, Ezprezzo, Ladage Events, Ladagerie and The Wold. With Bram’s they are taking the first step to go abroad.
The container is ideal for a franchise business; it will be delivered on location, it’s fully furnished and as franchisee you can start working immediately.
Sommelierwijnen (Sommelier Wine) is making exceptional wines from small, but very good winemakers available for the Dutch gastronomy. Sommelierwijnen is an initiative of eight wine importers who have joined forces to sell all their wines through one contact. Various sommeliers from Dutch Michelin starred restaurants already work with them.
The founders of Sommelierwijnen are all importers with great skill and passion for wines that are being delivered to restaurants. By combining their offerings they make it possible for sommeliers to work with several wineries that would otherwise be inaccessible or impractical. In plain language: you’re not waiting for yet another wine supplier where you might only buy 60 bottles a year or even less. Even though the wine is very special! Thanks to this initiative, sommeliers are now able to order wines at 8 different importers with the benefit of just one contact and one invoice.
These importers offer many unique wines from the Jura, Corsica, India and even Thailand. Even from within Europe, they sell classic wines made from unknown grapes like Tibouren, Elbling, Frühroter and Roter Veltliner and unknown wines from for example Madeira, Serbia and Bosnia. The 8 different wine suppliers do introduce themselves at the website, each with two of their so-called ‘signature wines’; wines that are an example for their vision and quality.
#tousaubistrot by ‘Le Fooding’ is an initiative calling all people in Paris to return to the bistros, brasseries and restaurants tonight (November 17). In order to join in a minute’s silence in memory of the victims. The occasion will be held in their establishments and on their terraces at nine o’clock.
The gourmet magazine ‘le Fooding‘ invites, through social media, all his friends, partners, followers, visitors of Paris and all the french who can afford it to go out for dinner tonight. Besides the minute of silence in memory of the victims of the attacks of last Friday #tousaubistrot also aims to provide help to those working in the hospitality industry. In addition, the founders of ‘Le Fooding’ also want to show that Paris is Paris and it won’t be changed by fear. As one of the cartoonists from Charlie Hebdo so clearly implied in his view of the events of November 13: “Friends from the whole world, thank you for #prayforParis but we do not need more religion. Since my daughter lives and works in Paris, I hardly slept the night of 13 November. Luckily she was at home and we soon had contact. However it took a while to locate friends and colleagues. This process was accelerated through WhatsApp and social media. The safety check of Facebook was a great initiative and provided incredible support. Yet the whereabouts of one female colleague remained unclear until three o’clock in the morning. She was visiting a bar that night and the bar owner closed the doors and barricaded them, as soon as they heard that shootings took place in other bistro’s. He tried to protect his guests this way and because her mobile phone was not charged, it was impossible to have contact. I am certain that there are many more stories in which owners of French restaurants have undertaken action or were just unable to do so. What would you do?
The French have a saying that will certainly describe the atmosphere tonight at nine o’clock, ‘Chantons sous les armes’ roughly translated as ‘Lets sing, despite the tears’. We wish all the restaurants, many guests and we will be with them in our thoughts at nine o’clock tonight. ^Marjolein
A collaboration between AVIA and Willem Dankers’ restaurant Dorset creates a gastronomic experience in their food plaza along the highway, A1 (Lonnekermeer).
The term full service gas station takes on a whole new dimension. Thanks to a unique partnership between AVIA and restaurant Dorset in Borne, a visit to the renewed gas station along the A1 will become a gastronomic experience. Homemade pasta, stewed veal cheeks or fresh baked sourdough bread instead of a simple meatball. Gastronomy along the highway!
The renewed AVIA gas station will be reopened by the end of this year. Willem Dankers of restaurant Dorset in Borne was asked to create a new concept regarding the food-related activities. AVIA’s Niek Weghorst: ‘A full service gas station is all about service, convenience and quality. Our customers, no matter how diverse, should experience a moment of rest like at home. In our vision this includes tasty and healthy food.’
The concept, a food plaza with a spacious kitchen and a counter with a variety of fresh products, meals, fruits, delicacies and snacks. Both to take with you or eat in, says Willem Dankers: “The concept is based on fresh, healthy products and meals with a lot of variation, taste and of course quality. For example customers can order a fresh, homemade pasta, lasagne, hot chicken, stewed veal cheeks or an organic cappuccino with a warm muffin. Fresh fruit and delicacies. In other words, a complete assortment of food with with plenty of choice with an international look and feel. Of course, everything is top quality, delicious and tasteful.”
All products get a Dorset quality label, the restaurant has recently been awarded a Bib Gourmand, and is listed in the top hundred best restaurants of The Netherlands and a member of the Alliance Gastronomique.
Dorset’s food plaza is not only for visitors. Next to the standard assortment, there are also ‘take-a-way’ dishes on the menu. The menu will be updated regularly. “We want to offer as many variation and surprises as possible, in fact the same way we work in our restaurant.” Says Willem Dankers.

Dick Middelweerd, chef of restaurant Treeswijkhoeve (** by Michelin), has great plans for the coming weeks. From 16 October up to 25 October you can enjoy his culinary talent during the Dutch Design Week in Eindhoven as at 10 November he will cook at a pop-up restaurant at Buitenplaats Amerongen.
In the iconic Augustine Church, in the heart of Eindhoven, major entrepreneurs from the region join their traditional knowledge for the ‘Allegory of the South‘. Atelier van Asseldonk will realize a complete installation, based on a twenty meter long table. The company Oogenlust will decorate the church, supported by master builder Bruns. The nave of the Augustine Church transforms at night into a dining room, where Dick Middelweerd will offer a special menu for the occasion. Guests will toast with Beerze Beer from the region. This initiative is open to visitors during the Dutch Design Week from 16 to 25 October.
On 10 November Dick Middelweerd and his team will serve a one-time pop-up five-course dinner at the historic venue ‘Buitenplaats Amerongen’. They will make some of his famous local signature dishes, like his ‘Worstenbrood’ (Meatbread), the smoked salmon (on cedar) in a humidor and ‘prol’. Location is the recently renovated coach house of the historic ‘Buitenplaats Amerongen’. Besides cooking Dick Middelweerd will take care of the music as DJ at the after party!
The pop-up restaurant at the historic venue ‘Buitenplaats Amerongen’ is an initiative of entrepreneurs from Amerongen, Peter-Paul Swijnenburg of Buitenplaats Amerongen and Nico Donkelaar from the Olive Oil Shop, who already successfully brought two star chef Edwin Vinke to Amerongen. They combine a wonderful evening to enjoy the dishes of a famous chef with an after party to take the feet from the floor.
The ‘Allegory of the South’ will be a great addition to the Dutch Design Week because of the co-creation of all parties. Check out their video.
