Barstro Prins & Aap (Prince & Monkey) is launching exclusive bar takeovers with internationally renowned bartenders from World’s 50 Best Bars. On June 20, they will launch with a takeover by Nikos Bakoulis, co-founder of world-famous Athens bars The Clumsies and The Line, and currently bar consultant for Prins & Aap.

Prins & Aap has teamed up with award-winning bartender Nikos Bakoulis, co-founder of the world-famous Athenian bars The Clumsies, and his latest addition, Line. With two bars ranked in the World’s 50 Best Bars, Nikos is a master mixologist, specialised in Liquid R&D, menu development and no-low creations.

Nikos Bakoulis: “The concept for Barstro Prins & Aap inaugural cocktail menu aims to establish a distinctive destination that accentuates localization and features Dutch ingredients. Simultaneously, it upholds a commitment to biodiversity, supporting small producers and Dutch companies practising ethical production methods. This idea serves as the foundation for presenting diverse flavours in line with the ethos of Amsterdam and Andaz Amsterdam. To capture this diversity, we draw inspiration from various elements, including shapes, colours, and unconventional combinations.”

About Barstro Prins & Aap at boutique hotel Andaz Amsterdam Prinsengracht

Barstro Prins & Aap is located in the famous boutique hotel Andaz Amsterdam Prinsengracht. A combination of a creative bar and a Dutch bistro, Prins & Aap is the place where residents of Amsterdam and hotel guests come together for the best cocktails, local dishes and meeting new people.

Innovative cocktail menu at Barstro Prins & Aap| Cocktails on tap and local bites

The innovative cocktail menu has been thoughtfully created by top international bartender Nikos Bakoulis and brought to life by a passionate bar team. Whether they come from the shaker, or from the sophisticated tap, there is plenty of choice for any time of the day. The current cocktail menu focuses on nature, with earthy, spicy or fruity flavours. Combinations like vodka, fennel root, ginger, grape and tonic, or a 0.0 with Martini Floreale, pear, vanilla, pink pepper, lychee and sparkling wine. The extensive drinks menu is the centrepiece of this new neighbourhood hotspot, which also holds regular gin tastings. The dishes are prepared with products from Amsterdam and Dutch suppliers to emphasise the local character of the barstro and are a tasty complement to the cocktail menu. From all-day brunch to lunch, dinner and drinks, Barstro Prins & Aap serves comfort food with pure flavours.

AI design and centrepiece by Marcel Wanders

A lot of Dutch design in the interior, with many references to the Golden Age and the city of Amsterdam. For instance, in addition to the lyrics of a famous Amsterdam song on the bar, the wallpaper features details of events from the 17th century. The central table at the window is inspired by the painter Vermeer and top designer Marcel Wanders was in turn inspired by Dutch painter Hieronymus Bosch for his impressive triptych and centrepiece. Nice detail: throughout the bar are several portraits from the Golden Age, designed by AI.

Karin Krautgartner, interior designer and owner byKK: ‘About 12 years ago, I worked with Marcel Wanders on the design of hotel Andaz Amsterdam Prinsengracht. I was closely involved in the creation, design and implementation of the concept. Now we have reconnected the place with the city and the Prinsengracht, a kind of microcosm where people work, love and celebrate life together. Prins & Aap connects people and celebrates Amsterdam’s diversity and creativity.’

Princes and monkeys

The interior concept is also reflected in the name. Among other things, Prins (Prince) refers to the statues of princes found throughout the hotel and Aap (Monkey) emphasises the barstro’s mischievous and playful character. Indeed, Prins & Aap likes to experiment. Prins further refers to its location on the Prinsengracht and Aap is the abbreviation of Andaz Amsterdam Prinsengracht.
