Every day we spot fun, new concepts. This week: Bardo in Apeldoorn, a restaurant with a French, chic but also natural ambiance. Owners Yves Jaartsveld and Monique van Helsdingen aim to keep it very personal and offer their guests a beautiful experience. In Arkel, De Oude Melkfabriek (The Old Milk factory) opened in October 2024, where you can eat out and attend culinary workshops on Persian cuisine, by chef Abbas. And in November, Nume New York Bistro Amsterdam opened in The Manor Hotel. You pronounce it as ‘New Me’!

Bardo in Apeldoorn | Bardo bravo la vie

Bardo opened in early December 2024 at Lijenplein 10a in Apeldoorn. A lunchroom run by owners Yves Jaartsveld and Monique van Helsdingen. After several years of experience in other catering businesses in Apeldoorn, it is now time for their own business. In the former Brasserie M’Joy, they have opened Bardo after an extensive renovation. The name is a reference to Brigitte Bardot but without a t. The letter ‘t’ is however incorporated in their logo and a black-and-white photo of Brigitte can be seen in the restaurant. Bardot’s reference matches the look of the business: French, chic but also very natural.

The company has a small kitchen and they work with fresh products from suppliers in the surrounding area. Such as the local fishmonger (Fish ‘n Food), baker (Echte Bakker Keurhorst) and cheesemonger. Since it is a small business, Monique and Yves can make it very personal and offer their guests a very personal experience. Among other things, they have ‘poffertjes’ on the menu for the kids! But also available for a late breakfast or early lunch: a banana pancake and a yoghurt bowl with fruit and granola. For lunch they serve: Karaage chicken (tender Japanese chicken with homemade oriental sauce) and a Bal Luxe (which never bores). They also have several charcuterie boards and specials like Daging Rendang and a tuna steak. And you can finish it off with a homemade fudge! Bardo is open from Thursday to Monday. Restaurant De Oude Melkfabriek in Arkel | Enjoying Persian cuisine

In October 2024, De Oude Melkfabriek opened its doors in Arkel. Housed in the space of an old Milk Factory, the restaurant offers a unique combination of culinary workshops, dining and catering options.

Chef Abbas Hossein Zadeh’s culinary workshops are at the heart of the concept. Chef Abbas fled from Iran to the Netherlands in 1990, where he chose a new direction and discovered his passion for cooking. In the spacious, well-equipped kitchen, you will learn the secrets of Persian cuisine. From fragrant stews to flavourful blends of spices – the workshops are a feast for the taste buds and the senses. Afterwards, you will slide behind your table to enjoy the dishes you have prepared with your company. Whether you are a beginner or a seasoned cook, you will always learn something new at De Oude Melkfabriek. It is a perfect activity for a company or team outing. Cook together and then enjoy your own creations.

Abbas also likes to be inspired by other cuisines, as long as he can work with fresh products from local entrepreneurs. The meat he uses is halal and comes from a carefully selected butcher, and the bread is baked specially for him. The vegetables are washed no less than three times before use. Abbas does not shy away from expensive ingredients either; he works with saffron, walnuts and pomegranate to form his dishes to perfection. In 2025, they plan to expand their workshops to include other cuisines and themed evenings. Besides workshops, you can also come to the restaurant for dinner. Event catering is also possible.

The building, which dates from the beginning of the last century, was decommissioned in 1986. Thanks to the efforts of various (often start-up) entrepreneurs, the milk factory has been transformed into a lively business centre. You can now find everything from studio spaces to shops here. Since 1985, Wijnhandel Ouwerkerk has also been located in the milk factory. Together, they ensure that De Oude Melkfabriek’s dishes go perfectly with the wines, thanks to their neighbours’ years of wine knowledge.

Nume | A New York-style Bistro at The Manor Hotel in Amsterdam

NUME Bistro, located in the heart of The Manor Hotel in Amsterdam, offers sophisticated yet accessible cuisine inspired by New York City’s vibrant bistros. Locals and hotel guests alike are welcome at NUME. Restaurant NUME is a story of transformation and new beginnings. The name itself, ‘NUME,’ stands for ‘New Me’. The restaurant’s journey began with another concept that, over time, no longer resonated with the founders’ creative vision. Instead of staying stuck, they embraced the challenge. They recognised that change was necessary to truly reflect their passion for innovation and fresh experiences. NUME represents more than just a change in name or menu; it is a change in mindset. Every detail, from the dishes to the ambiance, reflects this idea of transformation. Guests are welcomed into a space that feels new, exciting and full of possibilities: an invitation to embrace change and enjoy the fresh, modern dining experience.

Guests can enjoy, among others, a Manhattan Clam Chowder, Vegan Steak Tartare, a New Dog, Chuck Steak, Fried Cod, Mac and Cheese, Fried Cauliflower, Coleslaw and Vegan Pumpkin Ravioli. For dessert, the menu includes Petit Pancakes and Pecan Pie!
