Horecava | This is how top chefs see the future of the hospitality industry: socially engaged, innovative and exceptionally delicious

Society is increasingly focusing on healthy living, a good work-life balance and the future of the planet. For decades, the catering industry stood for meat, fish, wine and hard work without a private life. Those times are over. At the Horecava, a Dutch event for the hospitality industry from January  13 to 16 2025, there will be a focus on social trends and social changes in the culinary world. Last week, we already linked to the Taste of Horecava by Gault&Millau and chef Jef Schuur is also shaping the Sustainable Fish Symposium in collaboration with three international three-star chefs and marine biologists at the Horecava. He aims to not only serve sustainable fish dishes in his own Texel restaurant, but also to inspire and inform other chefs. There will also be a Taste of Wine Professional Theatre at the Horecava. Sardineshop.be | The perfect apero bites for the holiday season

Thomas Baeyens, the passionate chef of restaurant L’Amitié in Antwerp, recently launched his new project: Sardineshop.be. Together with Jeroen Lybaert, he created the web shop for premium canned fish in Belgium and the Netherlands. The rise of ‘tinned fish’ as a trend on platforms such as TikTok has rediscovered and popularised tinned fish among a wide and young audience. From tasty combinations to creative recipes, tinned fish is proving to be versatile, healthy and easy. The webshop offers both individual cans and boxes for those who like to give it as a gift or try different flavours for themselves. Brasserie Appelmans & the Absinth Bar exists 20 years | Here’s how they celebrate!

Fun promotions to celebrate their 20th anniversary at Brasserie Appelmans and Absinthbar in Antwerp. Appelmans is one of the first concepts of hospitality wizard Kasper Stuart’s, and they are celebrating this anniversary big time. With, among other things, a revival of the successes from their menu of the last 20 years, a Big Brunch (took place on 3 November), a bar menu with the signature absinthe cocktails of all their iconic bartenders of the last 20 years, a cocktail kit to make your own cocktails at home, ánd during their birthday week (Thursday 28 November to 5 December) they treat their loyal customers by offering the dishes of 2004 for the prices of 2004. What we also really like: as of December 3rd, they will sell 100 ‘mini bars’ full of cocktail & party fun as a unique end-of-year gift! Check out their festivities on the website, link in the title.

On the menu of the Dutch McDonald’s | a McDonald’s X Old Amsterdam burger

McDonalds’ “year-end burger” is a “Homestyle Crispy Chicken” with Old Amsterdam cheese this year. The combination is available with either a chicken burger or a veggie Valess burger. This is the eighth time McDonald’s has partnered with Old Amsterdam. Check out more specials around the end of 2024 in their press release, link in title.

Airbnb | House sit for Paddington and The Browns in their London home

Another great Airbnb location, we unfortunately missed this one! You were able to book a stay for one night on November 8th till the 10th. In celebration of the release of ‘Paddington in Peru’, everyone’s favorite bear, Paddington™, is inviting families worldwide for a once-in-a-lifetime overnight stay on Airbnb at his Windsor Gardens home. Great way to serve cheesecake, any other cake or even ice cream

Spotted on the Instagram of blogger, Paris.cake. As we’re going to Paris in the beginning of December I searched for Paris on Instagram, this has nothing to do with Paris, but we love how Lolly Bakery creates their cheesecake lollies. The website of this  bakery is linked in the title. We can imagine that the Christmas lolly collection is going to be fabulous.

Four Seasons celebrates ‘World Kindness Day’ with food at the heart

Hilton partnered with Keep America Beautiful to support community revitalization during their ‘Global Week of Engagement’.
