The Genius Amsterdam sells sausage rolls originated from the south of the Netherlands
On 1 October 2023, ‘The Genius’ opened its doors on Amsterdam’s Kinkerstraat. The owner, originally from the Dutch region Brabant, Marcel Ginus found that sausage rolls were very scarce in our Capital and decided to do something about it. The Genius serves handmade sausage rolls made by Bart Houben, a baker from the region Brabant. They also sell ‘star boxes’ with sausage bread creations by top chefs!

Inspiration for The Genius
Marcel Ginus’ daughter had been living in Amsterdam for quite some time before he discovered the scarcity of the sausage roll speciality in the capital. He decided to take matters into his own hands. Marcel was able to convince a sausage roll baker of his idea soon after, which is how the cooperation with sausage roll baker Bart Houben from Eindhoven started. We wrote about their ‘IKOOKAANJOU.NL’ action in 2020, they sold their traditional sausage rolls and mini’s in boxes with messages to tell people that you think about them.
The haute cuisine Star box of sausage rolls
The concept of The Genius is very simple; baking hand-rolled, quality sausage rolls with meat from the region Brabant. The bakery became a hotspot for people who moved to Amsterdam from Brabant in no time. However, people from Amsterdam soon followed. Marcel Ginus and Bart Houben came up with several variations of the Brabant’s pride. These included a sausage roll with parmesan and truffle, a vegan option and a high-protein variant with chicken and wholemeal dough. They also sell the Star Box with 20 mini sausage roll creations by the likes of chef Syrco Bakker (formerly Pure C**), chef Soenil Bahadoer (De Lindehof**), chef Francois Geurds (FG restaurant**) and chef Dick Middelweerd (De Treeswijkhoeve**).
