At horecatrends.com we spot many national and international trends on a daily basis. We pick the most interesting ones to write about, the other trends we use in our weekly column ‘Trends we spotted this week’.

With this week links to articles including a couple of them on reservation fees at restaurants in the hope that this will reduce the number of no-shows. In New York, more and more restaurants are turning to this system. Leonie van Spronsen recently wrote a blog about this subject. It’s kind of a double standard that lots of guests don’t want to pay a restaurant fee while we pay, without any problem, in advance for tickets to Taylor Swift.

A unique combination; a Latin-American fine-dining experience on a London train, the Supperclub.Tube. Also in London: the Vagabond’s Wine Bars where you can choose from as many as 140 varieties of wines!

Aperol sorbet floating in prosecco, sounds delicious! It’s served at Il Terrazzo in department store Nordstrom in NYC. The sorbet is made by il Laboratorio del Gelato. And also in NYC –  the hottest new sushi bar is hidden in The Vault of Saks Fifth Avenue. Great idea, an omakase inside a small corner of a retail outlet?

A touring mini club, Fandangoe Discoteca invites people to dance out their grief! Created by artist Annie Frost Nicholson and it will come to the Netherlands as well. And International Hotel Capital Partners is the new owner of Hilton Garden Inn Leiden Hotel.  

Located 4.5 hours from NYC, in Watkins Glen, is the world’s smallest diner, which is also appropriately named World’s Smallest Diner. And we read about an Instant Noodle Factory in Queens, they serve 88 different instant noodles options with 30 different toppings.

The popular experience, Dining in the Dark, is returning to Amsterdam on August 31, this time it takes place at the NOMAD aan het IJ. And we love the design of the Costa Rican Suitree Experience Hotel with treehouse style rooms.

International Hotel Capital Partners new owner of Hilton Garden Inn Leiden Hotel

International Hotel Capital Partners (IHCP), a Dutch hotel developer and operator, is taking over the property and operations of the Hilton Garden Inn Hotel at the Leiden Bio Science Park from production company RECO Development. Opened in 2013, the hotel has 173 rooms, meeting facilities with six function rooms, a bar and restaurant. The hotel was developed and is run under the Hilton Garden Inn brand, the relationship with Hilton will continue unchanged after the acquisition. A reservation fee to be paid prior to dining at restaurants

Several restaurant owners in New York are fed up with the large number of no-shows. As a result, several restaurants have instituted that guests must make an advance payment when making a reservation, which is refunded when guests arrive. Restaurant owners hope this will reduce the percentage of no-shows and more effectively provide more guests with a wonderful evening. Read the article on this topic on Secret NYC, link in the title. Latin American fine-dining experience on a London train

A unique combination; a Latin-American fine-dining experience on a London train. Here, a six-course menu will be served, with matching wines and cocktails. Enjoy a culinary journey from Mexico to Chile and Argentina. If you want to eat here, be quick because the Supperclub.Tube train only seats 35 guests and the restaurant is only open three nights a week. An idea spotted in an article on the NYC blog ‘Guest of a guest’, link in de title. Department store Nordstrom has transformed the patio of their signature culinary concept Bistro Verde into a citrus-hued, spritz-filled scene, Il Terrazzo. This pop-up at the fifth floor offers bocce bal, Italian dishes and the Aperol sorbet! Made by NYC favorite il Laboratorio del Gelato. Check out the image in the article for inspiration!

N.Y.C.’s hottest new sushi bar is hidden in The Vault of Saks Fifth Avenue

Since June 22, shoppers at the Manhattan flagship store of Saks Fifth Avenue have a new lunch spot inside the department store, located on the fine jewelry floor, known as The Vault, is Hoseki, a new six-seat sushi counter. We love the idea, in the past we spotted omakase counters in hotel rooms as well.

A touring mini club, Fandangoe Discoteca invites people to dance out their grief

The Fandangoe Discoteca is a mini disco cube created by artist Annie Frost Nicholson (fka The Fandangoe Kid) to help people maintain their mental health by processing grief in a novel way. The world’s smallest diner

Located 4.5 hours from NYC, in Watkins Glen, is the world’s smallest diner, which is also appropriately named ‘World’s Smallest Diner’. It has been there a couple of years (since 2017) but recently got some extra attention by a tweet of a governor. The owner Gerry Collins was 76 when he opened the diner which measures 34-square-feet. He serves hot dogs and the menu isn’t expensive! More details in the article on Secret NYC, link in the title.

‘Dining In The Dark’ experience in Amsterdam, August 31

The popular experience is returning to Amsterdam on August 31, this time taking place at the elegant NOMAD aan het IJ. Located in the heart of the city on the IJ river, the NOMAD’s use of fresh and healthy ingredients, is commitment to sustainability and has a cosy ambiance. Costa Rican Suitree Experience Hotel with treehouse style rooms

Elevated pods made of teak and steel are sprinkled around Costa Rica’s Suitree Experience Hotel, which was designed by local firm Studio Saxe to “coexist and symbiotically interact” with the surrounding ecosystem. Instant Noodle Factory in Queens | 88 different instant noodles options

88 different instant noodles options and 30 toppings are available at the Instant Noodle Factory in Queens, New York. Cierra was an engineer and Tat worked in finance before opening a shop with one of their most nostalgic meals, instant noodles. Choose from as many as 140 varieties of wine at one of Vagabond’s wine bars

England’s Vagabond Wines has several locations in London and even one in Birmingham, where you can choose from a huge selection of wine, as many as 140 varieties! Through a special tap system, you can control the amount of wine and taste as many different wines as you want. Once you’ve found your favourite wine? Pair it with a cheese board and other small bites to share. If you choose their location in Victoria, no one has to refrain from drinking as the Victoria train and bus station is just around the corner.
